Very Berry-Orange Oat Muffins Phase 2

Another muffin recipe that is good. A friend made these for me when I had coffee at her house and they were really good.

Very Berry-Orange Oat Muffins Phase 2

1/2 cup rolled oats
1/2 cup reduced-fat buttermilk
1-1/2 cups whole-wheat flour (or pastry flour)
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
1/4 teaspoon of salt
1 medium orange, rind and the juice
1/2 cup sugar substitute
1/4 cup canola oil
1 whole egg
1 cup of blueberries (fresh or frozen)
1/2 cup dried cranberries
Cooking spray

Preheat oven to 400 F. Lightly coat 12 muffin cups with cooking spray. Stir together oats and buttermilk in a small bowl and set aside for 5 minutes.

Whisk flour, baking powder, baking soda, cinnamon, and salt together in a medium bowl. Grate rind from orange and add to large bowl; squeeze 1/2 cup of orange juice and add to rind. Whisk in sugar substitute, oil, and egg until mixture is smooth. Blend oatmeal mixture, followed by flour mixture. Stir until ingredients are just combined, then gently fold in berries.
Spoon batter into prepared muffin tin and bake for 15 minutes, or until a toothpick inserted in the center comes out clean.
Serves 12

I'm having a brunch on Sunday and will make these along with Bob's WW blueberry muffins. I'll let everyone know how it goes.

OH WOW!! These were a hit! I also made Bob's WW Blueberry. Everyone wants the recipe and couldn't believe they were SB!! I used Spenda in Bob's and Whey Low in Recipelover's - Both equally good.

where do you find unsweetened dried cranberries? I've looked forever and can only find craisins!?

I'm afraid I've only found the sweetened ones, not matter what I've purchased they have some added sugar. However, the amount is relatively small when spread out over 12 muffins. The last dried cranberries I purchased I bought in bulk in the health food section of our local Fred Meyer (Kroger affiliate)

I just wanted to say thanks for this recipe. I made these and took them into work today and everyone loved them. This is the first whole wheat muffin I've made that people did not complain of the splenda taste. They were great!

i made these the other day, and they're terrific.

i've made lots of ww muffins, and pretty much all are good, but these are different and taste excellent.

Just to let you all know this time of year , you can make your own unsweetened dried cranberries. I made a bunch and tossed 'em in the freezer, for oatmeal and muffins.

i actually just used raisins. i had them on hand, but i'm sure the cranberries would be even better!
