I wasn't impressed with the ricotta cheese desserts either.
One treat I really enjoy for breakfast OR dessert is egg custard.
Very easy to make and you can really be creative with flavors.
Even the basic egg custard is yummy.
Here's a basic one:
Baked Custard
2 eggs
1 cup 1% milk
3 Tbs splenda
1 tsp vanilla
Nutmeg
[I added ½ low fat ricotta cheese, which made it much creamier. I also double this recipe. One can never have too much custard!]
Preheat oven to 350. Pour very hot water into a square or rectangular baking dish large enough to hold 3 (1/2 cup) pyrex cups. Blend all ingredients but nutmeg together very well. Pour into 3 pyrex cups. Sprinkle with nutmeg. Place in hot water in pan. Bake 25 minutes for milk, 30 or more for soymilk. Eat warm or chilled.
