How to bake a good sweet potatoe?

Why not make Sweet-Potato Fries?


OVEN - FRIED SWEET POTATOES




4 med. sweet potatoes
2 c. cold water
1/2 tsp. salt
ICBINB Spray

Peel the potatoes. Slice lengthwise or use a French fry cutter. In a large bowl, soak in salted cold water for one hour. Drain and pat dry with a paper towel.

Arrange on a cookie sheet and spray with ICBINB. Bake at 450 degrees for 30 minutes or until brown on bottom. Turn and bake another 15 minutes or until crisp and tender when tested with fork. Sprinkle with chili powder.
Back on the beach after two car accidents in less than 2 months, a long recovery and 30 lb weight gain.

I love Sweet Potatoes (I am in Phase 1 but sometimes cheat and eat one) I figure it is better to cheat with that than anything else! Anyway, they have sweet potatoes that come in plastic shrink wrap now. All you do is throw it in the microwave for 7 minutes and WHALA the best, softest sweet potatoe!! Seriously this is a great invention! Hope you can find them at your grocery store! :P

Just to chime in..we use the microwave to do ours. We wash them when we get them from the store, allow them to air dry, bag them up in sandwich bags, and then place them in our potatoe bin.

When we want one, we just pull them out, plop them in the microwave for around 5 minutes and they come out steaming good :)

THAT is the truth, but I think they break a few SBD rules. :wink: LOL But they are the best sweet potatoes I've ever had!

I made sweet potatoes last night and they were soooo good!

I peeled the potatoes and the cut them into 1/2 inch thick medallions. I brushed them with melted Smart Balance and sprinkled them with cinnamon. I put the in the oven (before I turned it on) and then heated it to 350 degrees. Once the oven is 350, I flipped them, but more melted butter and cinnamon on, and baked them for 15 more minutes. They were delicious!!

This is my first post (doing A LOT of research before I actually start :shock: ) and have to tell you guys how to solve this baked sweet potato problem!! Someone mentioned it, but didn't go into too much detail.

Def. check for the "aged" sweet potato like someone said before. I wash, stick in the microwave for approx 4 mins for small one... maybe longer for larger ones. I preheat the oven to 350 while I wait. When it's done, wrap in foil and pop into the oven. I usually do this first before I cook any of the rest of dinner, so the potato tends to be baking for 15-20 mins or so. When i'm done cooking the rest, the sweet potato should be done! Mine have always come out soft and mushy. The longer you leave it in, the better. (Beats waiting over an hour for it to bake normally) :)

I hope this works for the rest! More posts will come when I finally start (Estimate: June 6th, i have finals for grad school and I KNOW I will need to snack on junk food!)

Just a thought- I work in a restaurant (along with a few other jobs I have!) and we steam our sweet potatoes- they come out so beautifully you almost need nothing else on them. I'm not sure how you would do this at home- Im a lousy cook, myself and pop mine in the microwave cause Im lazy :P

Forgot to mention, a spice mixture I LOVE on my cut sweet potatoes (which I roast) is cinnamon, nutmeg, ginger, and cayenne. Amazing!

By the way - I eat the skin - I thought you were supposed to for added fiber and nutrients?

I love sweet potatoes!

I bake them. I guess this is a late P2 method, but they are sooo delicious. I first rub the potato with just enough EVOO to moisten the skin and then I cut a big X across the top of the tuber, then add a pat of Smart Balance. I drizzle about a Tbsp of honey all over the top and add cinnamon, a few scrapes of nutmeg, and a couple shakes of cayenne pepper. Wrap it up in aluminum foil, dull side out and bake it for like 1 hour, but you can leave them in the oven for a couple hours if you need to. I usually start my potatoes 2 hours before dinner and have never had them dry out.

I liked them sliced like steak fries, tossed with olive oil, garlic, kosher salt, fresh ground peper, rosemary and thyme. Then I put them on a cookie sheet and bake for about 10-20 minutes at 400 degrees.

I have really been avoiding sweet potatoes, but after reading these posts I think I may change my mind. Can someone tell me a little more about them?

1. Why are they good for us on south beach? Low GI?

2. Average number of calories per potato?

I use a med. size sweet potato and put a few holes in it with a fork. Then I put it in a fold over sandwich bag with about a tablespoon of water, fold it shut, and put it in the microwave for about 7 minutes (stick a fork in it to see if it needs to cook a little longer). I top it with Smart Balance-YUMMY and moist.

Baking Sweet Potatoes

My brother taught me this trick. To bake sweet potatoes, put them in a microwavable dish and add just a little water (a couple of Tbsp). Cover and microwave about 5 minutes (you may need to cook longer depending on the size of the potato and how many you're cooking).

They always come out moist and tender! I usually let them sit for a few minutes in the dish before eating. :)

Had to share this recipe, enjoy!

Serves 6

2 pounds small sweet potatoes
2 ounces grated Parmesan cheese
3 TB chopped parsley
2 garlic cloves, minced
1/2 tsp oregano
1/2 tsp rosemary, crumbled
1/4 tsp salt
1/4 tsp pepper

Preheat oven to 400°F.
If potatoes are not small, halve lengthwise to bake. Prick sweet potatoes, place on a baking sheet and bake 35 to 45 minutes, or until tender but not mushy. Remove from oven and set on a rack to cool. Increase oven temperature to broil.
Meanwhile, in medium bowl, combine Parmesan, parsley, garlic, oregano, rosemary, salt and pepper.
When potatoes are cool enough to handle, halve lengthwise. Scoop sweet potato flesh out of skins, leaving a wall 1/4" thick. (Reserve scooped out flesh for another use.) Cut each sweet potato shell lengthwise into 1/2"-wide wedges.
Add skins to herbed Parmesan mixture and gently toss to combine. Place sweet potato skins on a baking sheet and broil 4" to 5" from the for 4 to 6 minutes, or until cheese is melted and bubbly. Serve hot.

Per Serving: 99 calories, 2.9g total fat, 1.8g saturated fat, 0.8g monounsaturated fat, 0.1g polyunsaturated fat, 1g dietary fiber, 5g protein, 14g carbohydrate, 8mg cholesterol, 272mg sodium

I can never get them to crisp up :( They are either limp or they end up coming out black but still limp :? How everyone gets them to crisp up :cry:
