First veggie day was great!!!!!!!!
Now I need to plan for Thursday the first the vegan day.
I will sorely miss my egg/bean breakfast, the rest of the day should be a cakewalk.

Glad I found this thread! I'm on my second time around with SBD, both times as vegan. I lost 50+ lbs. the first time around in 2004-2005, but thru illness and stress, gained back almost 30. Today is day one of SBD for me. I have a great quinoa recipe: 1 tsp. each of powdered ginger, cumin, corriander and turmeric. Saute' spices in a small amount of olive oil until fragrant and slightly browned. Add rinsed and well drained quinoa (1 cup) and 2 cups boiling water. Stir well. Cook covered until tender and center of each 'grain' is done. Tastes great with a little soy sauce.

great tofu recipe

I make a fantanstic vegetarian stir-fry with tofu, the key is to marinate it for an hour before cooking: I chop it into strips and marinate in a mixture of low-sodium soy sauce, rice vinegar, a little lemon juice, LOTS of grated ginger, and a heaping tablespoon of oyster sauce (don't let the name fool you, oyster sauce has no animal products or by-products). I then stir-fry whatever vegeatbles I want in 1 tablespoon olive oil and 1 tablespoon peanut oil (optional if you're allergic), and add the tofu for the last 5 minutes of cooking. Veggies are usually broccoli, baby carrots, zucchini, bean sprouts, snap peas, red bell pepper. my husband and I add crushed red pepper to taste.
