I eat lots of whole, fresh fruits and vegetables, nuts and seeds, because I am primarily raw. However, I also do incorporate soy in various forms and quinoa, the only two complete vegan proteins. I eat other whole grains (sprouted and cooked), too.

Any good quinoa recipes? I love it cooked in a little chicken broth instead of water but I am looking for some variation. Thanks.

Anybody enjoying their garden treats this September! I have been making bruschetta with a mixture of chopped garden tomatoes, fresh basil, garlic, sea salt and fresh ground pepper. I toast some thin sliced sourdough bread for the fam and ww anything for me. Then I smear fresh basil pesto on the toast, top with a thin slice of fresh mozarella and smother with the tomato mixture. OHMYGOD! the combo is excruciatingly delicious! :lol:

Mmm, yes. Making a lot of things, enjoying drying things, too... I love dehydrated tomatoes, and I'm allergic to sulphites, so it's nice to have my own. I have so many eggplant I can hardly believe it - last year I got four, this year I have about 20 (so far!).

I wish I was exaggerating! I've dehydrated a lot of them, and use them like chips and crusts, and chopped on salads. Eggplant parm, and bread and bake them, making them taste like onion rings are how I like them best. I love ratatouille but I don't eat too many warm things in the summer, and it really heats up my place when I let things simmer for awhile. Maybe I'll take your suggestion if I get sick of it and freeze some for when it cools down!

Lorka - Tell me about your dehydrator. I am really interested in using that for my veggie garden next year. It appeals to me because I imagine all the nutrients get dehydrated along with the veggie so you are getting really concentrated goodness. What is your favorite dehydrated thing?

Well, the "South Beach Diet" says that it increases the sugar and therefore, you eat more and more calories and so forth and more carbohydrates in smaller amounts.

However, having the knowledge of a healthy diet, you can incorporate these foods into your diet. I finished losing my unwanted weight about five years ago (why I still lurk here is beyond me sometimes!) but I wanted to clarify that in case naysayers come in here and say that it is bad for you.

I never dry anything above 115 degrees because I am a vegan and practice a mostly raw diet, but that is just me. I love regular dehydrated fruits and veggies because of the sulphite allergy - I cannot buy anything that is sulphite free unless it's organic, and if it's organic, it's far cheaper to dry my own!
I also make meals and desserts - a lot of raw forums have a lot of things - like "cooking" in the dehydrator.

I'm going to go get me some Quinoa. Its been many, many years since I cooked with it but I remember liking it. I guess i will cook it the way I always did, in chicken broth instead of water. Any other ideas or recipes are welcomed.

I posted a recipe for quinoa stuffed peppers once a long time ago. It's linked into the recipe summary thread in the Recipe and Food forum. Omit the suggestion for cheese if you avoid dairy, but I think it should work otherwise.

Ok I am going to try to generate some interest again...........

We will soon see an influx of newbies ( around the first of the year). probably a few who want try out a vegetarian diet.
I need to shake up my SB experience, so...I am thinking about ....original P2 for 2days per week...p2 vegetarian 2 days..... p2 vegan 1 day..... and P3 1 day.( wine and bread :lol: )
Today will be P2 vegetarian so for lunch I had an awesome stuffed pablano pepper in a ww tortilla wrap w/sour cream .YUM!
recipe
stuffing = combine chopped onion.... lots..chopped corn tortillas...red beans, ...rice
over 1 0z. 'stick' of colby jack cheese.... In the bottom of 3 split peppers with about 1/2 the seeds removed ( six halves )
processed tomato over and under the the whole thing. in the oven at 325 for 90 minutes uncovered

The peppers were pretty big ... they were 3 from a dozen I had picked up on 'overstock' shelf ... steam blanched whole and froze.

I am hoping to see some basic vegan recipes here.
