Fajitas have always been one of my favorite items to order, and (I thought) one of the healthiest (darn white flower tortillas!!!) Anyway, looking at them on the menu while dining out the other night, I began to think of ways of adjusting them to be SB friendly. It seems that the two main enemies here are the tortillas and the rice. The rice is easy, I have no problem skipping it and getting more tomatoes, lettuce, cheese, black beans, etc. However the tortillas are a bit more of a challenge. Short of just skipping them and eating everything with a fork, I was wondering if it might be viable to bring my own whole wheat tortillas and just use those. Of course, it would have to be a bit of a subterfuge
, but I could deal with that once in awhile. After all, the way I figure it, one of the main concepts of SB is just making adjustments.
