Just want to make sure my daily diet seems okay....

Hello all. I am day 8 P1. I feel amazing. cravings are slim to none,although I havent had too much of an appetite. I am also vegetarian, but I eat seafood 3-4 times per week. No chicken, pork or beef. This is a typical day for me....keeping in mind I am a veg-head, I probably eat more beans than the average South beacher.

am-
3 EGGWHITE omlette with onions, mushrooms peppers. Low fat cheese
small glass v-8

snack- handfull of almonds

lunch- salad of mixed field greens, garbanzos, onions, tomato, lowfat feta

snack- EITHER a peice of lowfat string cheese OR celery with hummus

dinner- LOTS of roasted veggies, zuchinni, shrooms, peppers, onions- with a peice of roasted salmon or fish. If I dont have fish I will have the veffies with black beans or atop cauliflower mash.

snack- no sugar cinnamon almonds OR jello

Thanks for lookin this over....and I welcome any suggestions.

Unfortunately I'm not knowledgeable about phase 1 for vegetarians. But in case any feedback is better than none: All I see missing other than protein are good fats (which you may be getting by roasting your veggies and dressing your salads w/ olive oil) and milk/yogurt. Glad to see someone feeling so perky in P1! Hope a vegetarian Beacher will come along and check it out for you soon.

how come you dont use 1 yolk in your omelette, you could use the healthy fats. what oil/butter do you use to cook your omelette?
for your lunch what dressing are you using? you should add more veggies to your salad
there is a lot of oil in hummus from the store bought version be careful of your intake, remember 2T 1tsp a day. I also have a great recipe for it posted.
dinner sounds great what oils are you using to roast your fish? are you roasting your veggies with oil as well?
do you put butter in your cauliflower mash.
Everything sound really great, just wondering how you are actually cooking your food. if you are using oils for everything, including hummus and dressing for your salad. you may be over doing it. but if you are using no oils for any of it, you need to add oils, but remember there are oils in the hummus, how much i dont know if you made it yourself or bought it from a store. depending on your intake of store bought hummus you maybe going over your oils alone with just that hummus, depending on how much oil is in it and how much you intake. I have a recipe posted and it is pretty great and you can adjust it to your likings with the spices. uses 1tsp of oil for a whole 15oz can of garbanzo beans.
