So I've been reading other people's online journals and found it very inspiring and eductional. I've learned from prior dieting experiences that when I write down what I'm eating, I do better. So here goes something!
My husband and I decided sometime last week that we needed to do something different and South Beach came up as something we should learn about. I"m a pretty impulsive person (I'm sure that has something to do with my weight problem) and so I went straight to the store on Friday night and bought not just the basic blue book, but the cook book and the paperback good carbs bad carbs good fat bad fat book. I read a lot on Friday and Saturday and discovered this web site by Saturday evening. All of the recipes have me very excited about starting this new way of life.
Before our wedding, about three years ago, we went to a nutritionist and were eating pretty well. I lost about 20 pounds (the first weight loss experience of my life) and although I felt much better. I thought I could eat like that forever, but on our honeymoon cruise, we started slided. Over the next year and a half, I managed to gain all of that weight plus another 15 pounds back.
About a year ago I weighed in at a number that scared me to death. I started eating as I had before the wedding and lost about 10 pounds. Then, last summer, my parent's success with hypnosis insired us to try the same. We learned more useful tools for healthy eating and I lost 10 more pounds - even lost a pound while on a cruise during that time - but over the last 6 months have gained it all back. So I'm now at about 5 pounds more than pre-wedding weight and we are hoping to get pregnant soon, but so far it hasn't happened. I think it may be my body's way of telling me I need to lose some weight first. So I know I'll need to talk to my doc about staying on this kind of diet when I do become pregnant, but of all the options out there, EATING HEALTHY, as this plan encourages, seems the way to go - pregnant or not.
I'm busy making soup now, a recipe my mom has made for years that is a free food since it only has onions, leeks, broccoli and chicken broth. You cook them all together and then puree it so it feels more like a cream soup and is very satisfying.
I also can't wait to try the breakfast quiche cups to go. I'll definitley be makikng many varieties of this one. I tend not to eat breakfast or I get hundry byu the time I get to work tht I stop by the McD's for a breakfast sandwich. Neither one worked. SO this sounds yummy enough and easy enough to work for me.
So far today:
1 egg with portabella mushroom and broccoli for breakfast
brocolli stalks (I love these... anyone else?) for snack
We are about to go to the movies, so I htink I'll bring some pistachios that I've pre-counted into litttle baggies with. (My husband thinks I'm funny and cuty when I do this, but I think that the pre made meals will make a difference in our lives) :D |

I like broccoli stalks as well! Always have - I think we're in the minority though! :wink:

So day one is almost over and I think it was a success. Didn't really have lunch, but we got up late and I did make sure to snack.
Breakfast
egg with broccoli and mushrooms
Snack
broccoli stalks
Snack
30 pistachios (they go a long way!)
Snack
2 pieces of celery with low fat peanut butter
Snack
1 piece of celery stalk with 1/2 of a wedge of Laughing Cow Creamy Garlic Cheese
Dinner
cashew crusted tilapia
spinach sauteed with garlic in olive oil
Snack (due to low blood sugar reaction)
V8
Dessert
Sugar Free Strawberry Banana Jello
I didn't drink enough water, but I did get some in. I'll work on that tomorrow.
Made soup and quiches today. Can't wait for tomorrow! |

So Day 2 is almost over and I survived. I may have had too many snacks this afternoon, but I went to a meeting at 10:30 that didn't end until 2 and although I brought a snack, I was STARVED by the time I got to eat lunch and I stayed hungry until I'd eaten an extra item or two for lunch (although it was late enough to have counted as a snack.
Breakfast: Broccoli and Mushroom quiche to go (yum!)
Snack: Celery with Peanut butter
Snack: 10 pistachios (I had to share by baggie with my coworkers who were also stuck in the same meeting with me)
Lunch: Leftover tilapia (small piece), raw mushrooms, V8, string cheese, 15 cashews
Dinner: London Broil, raw snow peas
Dessert: I think I'm gonna have the expresso custard (I'm hoping its great since its the only phase one recipe I could find without ricotta which I can't stand)
I'm still not sure I've gotten enough water in, but I'm getting better.
I also made the surpirse mashed potatos using cauliflower and the tast I had was pretty good.
I forgot to mention a little motivational thing I did for myself before starting. I bought myself a bracelet that I wear everyday to remind myself why I want to lose weight. I don't know about the rest of you, but I think this will help me, since I often find myself in the middle of hte day eating something I shouldn't be and thinking "oh - i doesn't matter" or "I don't really mind the way I am" and then I'll go home that night, see myself in the mirror, or find my self out of breath on the stairs and THEN when I've already stuffed myself full that day - then I remember why I want to lose weight. I'm hoping that having this reminder will help keep me in line when the excitement wears off.

Another successful day. And a movie thrown in there too that I survived. I do like to eat at the movies so I brought my lunch and ate it there instead of popcorn. It worked.
Breakfast: 2 slices turkey bacon, 1 egg with vanilla, cinnnamon and splenda
Snack: celery with peanut butter
Lunch: leftover london broil, surprise mashed potatos
Snack: sugar snap peas, 15 cashews
Snack: Chilled Espresso Custard
Dinner: roasted chicken breast, sauteed mushrooms, more "mashed potatoes", broccoli soup, v8
Dessert: I think I'll have a flavored coffee and jello tonight.
The "potatos" were pretty good. I'm not a big mashed potato fan, but these do satisfy the carb desire and taste better to me than potatos. The texture is just a little grittier than potatos which is what I like. I'm not a big cook, but am learning to enjoy it a lot. I can't believe how often we're running the dishwasher this week! The cauliflower took a while to make since I wanted to make more than would fit in my food processor. My grandfather is also on SOuth Beach so I've been making enough to share with him too. I'll definitely make this one again.
The espresso custard was ok. More of a desesrt than jello, but since I don't make custard often, I'm not sure if I did it right. I ended up with some liquid in the bottom of my custard. Oh well. I'll try it again as well, but might read up on custard tricks before I make it again.
I bought some tofu today and am eager to try using it for a dessert. If any one has any ideas, I'd love them. I did find somehting online that suggests using it in the same way the ricotta is used so i may try that.
I couldn't help but to step on the scale this morning and found that I've already lost 2.5 pounds. Very happy. :D Off to a good start. |

I did the same thing when I went to the movies over the weekend, I took a snack of pistachios.... and even though I only had my 30 nuts, it took a long time to eat and felt like a treat.

So its lunch time now and I'm starting to get nervous about dinner tonight. I'm going to a meeting/awards event that is slated to be "heavy hors 'doeuvres" - I love those things and don't know what they will be. I guess I can hope for shrimp and chicken satay, but somehow I doubt it. I guess I'll try to be really full before going, but I also will try not to beat myself up if I don't eat perfectly.
Breakfast: Quiche cup
Snack: mushrooms, snow peas, celery with humus and 30 pistachios
Lunch: more leftover london broil, more "mashed potatoes", more broccoli soup, V8
Snack: 2 slices of turkey, celery stalk with peanut butter
Dinner: carved turkey - and nothing else! so proud of myself for not indulging in the passed hors d'ouevres
Dessert: not sure.. but I'm really wanting something good... and its too late to make anything good... shoot.
Ok so apparently it wasn't too late to make something cause I jsut found myself in the kitchen trying to make a tofu concoction. It's tasty, but tastes more like the inside of a pie and less like somehting you want to spoon into your mouth alone. So now I figure maybe it will taste better frozen. I think I read somewhere that you can feeze tofu with good results. In case anyone wants to try this I used a block of lite firm tofu and stuck it and 2/3 cup peanut butter in the blender then added 1/2 cup splenda, some no carb no calorie chocolate syrup and some unsweetened cocoa for good measure along with some vanilla. In all fairness I did take the recipe from a peanut butter pie recipe, so go figure it'll actually resemble the inside of a pie when I'm done with it. I'm hoping I'll like it more frozen, otherwise I jsut wasted a good pack of tofu.
By the way, anyone seen this no carb no calorie chocolate sauce? There's nothing in it so I don't see why it wouldn't be allowed. Anyone have any ideas?
Oh.. so for my dessert I had sugar snaps with a wedge of laughing cow. Strangest dessert in my life, but at least I'm not hungry anymore. Good night! |

Breakfast: 2 quiche cups and a mouthful of V8
Snack: celery and mushrooms with humus
Lunch: small salad with a few pieces of hard boiled egg and chicken, steamed cauliflower and brocolli (the nice man behing hte counter picked out all the carrots for me :) )
Snack: jello and flavored coffee
I just can't wait to get out of the office today. Normally when I feel this antsy I eat, but instead I'm going to get a sweet coffee. Funny how now coffee seems like a dessert.
Snack: 30 pistachios
Dinner: Salmon (cooked with carb solutions asian terriyaki less than 1 carb - I hope that was ok?), broccoli, sauteed spinach, salad with 2 grape tomatoes
Snack: frozen coffee that wasn't as frozen as we meant it to be |

Hi! I've heard other people mention the sugar free Chocolate syrup, but I've never tried it. what brand is it? is it good?
congrats on avoiding those appetizers, those are usually so tempting!

| Its called No Carb Gourmet and it says there are no calories and likewise no carb, fat or anything else (maybe some sodium). I don't really understand how though since there are many ingredients and one of them is modified food starch. Its a dark brown label with yellow and red text. I found it online at http://www.keepcomingbackproducts.com/proddetail.asp?pid=591 and it looks like its made by Walden Farms. |

| Has anyone else noticed that aside from the Almond ricotta, there are no nuts in the sample menu plan for phase 1. I know it says they are allowed elsewhere in the program, but now I'm starting to wonder if we're really supposed to eat nuts on phase 1. |

Breakfast: 3 slices of turkey bacon with 2 eggs and some mushrooms
Snack: jello, chicken broth, 10 spanish peanuts
Lunch: leftover chicken, sugar snaps with 1 wedge laughing cow and some fake mashed potatos
Dinner: pork tenderloin, sauteed spinach
Dessert: coffee and fudgsicle with 1 tsp peanut butter
I hope we found fudgesicles that are ok. There isn't much selection of fat free sugar free so we got 98% fat free no sugar added klondike bars. They are 90 calories and have sugar alchohals to make them only 11 grams of carbs. A tasty dessert and good to have on hand for those moments, but I think I'll make more of the custard as I think its much fewer calories and less likely to make me crave other things I shouldn't have.
Also, I got sick today between breakfast and lunch. I don't know if this is a little bug, since my throat hurts also, or if this is related to the diet. I've read that others have been sick in the early phases of the plan, but anyway I'm feeling better (stomach anyway) so I hope its over. |

Breakfast: 1 1/2 eggs with broccoli, spinach and a pinch of mozzerella
Snack: tea and jello
Dinner: mushroom soup, salmon, mashed cauliflower, broccoli, mixed greens
Dessert: tea, jello and a few nuts
It looks like I didn't eat that much today, but I didn't get have my first meal until about noon. I'm still not feeling great, so that could have something to do with it. I just learned that my grandfather who is also on South Beach lost 12 pounds in 2 weeks, so I'm feeling encouraged. I guess its fair to weigh myself tomorow morning so wish me luck. |

Breakfast: eggs (made with a touch of milk and some cinnamon and splenda), 2 slices turkey bacon
Snack: a few snow peas and a taste of humus (wasn't feeling well so couldn't eat much), mashed cauliflower (felt better in my belly)
Snack in movies: 30 pistachios and diet soda
Dinner: 5 large shrimp and broccoli
Still not feeling well. And its that time of the month, so I'm hoping that that is why I've only lost 4.5 pounds this week. I know I shouldn't say only, but after seeing 3.5 of those off in the first 3 days, I got excited and thought this would be quicker. I"m certainly eating A LOT less than before.
I'm trying the flaxseed muffins now. I hope they are good, cause that will fill the carb void that is the only thing I do feel like we are missing now (and fruit of course) I followed the recipe, but didn't have any baking powder in the house, so I hope I didn't ruin it by skipping that ingredient. I've never been much of a cook. I think I've cooked more items this week than in my whole life!
Oh, last night I was still wanting dessert after I got home, so I tried a quick custard using the one I'd made last week as a guide. I poured a little "better than eggs", some half and half, cinnamon, decaf coffee and splenda in a ramekin, mixed it all up and microwaved it for a minute or two (I think I did one minute first, then another and had to stop mid minute cause it was towering out of the ramekin) and it wasn't bad. Less liquidy than the others I'd made. A bit eggier, but still really hit the spot in a pinch. |
