Spaghetti Squash

Hi,

I just had spaghetti squash with meat sauce. I'm wondering if the squash is allowed on Phase I. It's not even listed in the book.

I have been looking for that answer as well - in the South Beach Diet book it states on p. 74 that spaghetti squash has a glycemic index of <20.

btw, where did you find the recipe that you are referring to?

Carol, thanks for the response. Sounds to me like Spaghetti Squash is very good. I like that because I love the stuff. I didn't have a recipe for the meal. I just cooked my squash, pulled out the spaghetti and then topped it with a meat sauce. I used Classico Sweet Pepper (it seemed to have the lowest sugar) and then lean ground beef. It was very good.

I've been puzzled about spaghetti squash for phase 1 also - I can't find it mentioned anywhere in the book, except there's a recipe for it in phase 2 so I guess it's allowed then anyway. I found a list of allowed foods on-line somewhere (sorry, can't remember where) that did list it for phase 1

I found a site that lists spaghetti squash for phase 1 and 2 - also includes a link for cooking - will be off to the store today to see if they have it in stock (live in a rural area where the supermarket isn't the best).

Some of the other posts here indicate that Spaghetti Squash is a Phase 2 item, but one problem is that different Glycemic Indicies found on the net differ about this vegetable. If you are on Phase 1, use it in moderation to be safe.

Also, the link above has recipies for cooking spaghetti squash but watch out! The microwave directions say to cover it with plastic wrap. This is considered unhealthy, unless you are using a plastic wrap designed for microwave use. Apparently using plastic wrap in a microwave releases dangerous chemicals...I'll try to find the link for that information and post it.

I find cooking the squash in a pot of water is the easiest. Just cut length wise, scrape out the seeds, put in pot and boil for about 15-20 minutes. Peeling the strands of spaghetti is very easy this way.

there are spaghetti squash recipies on fodnetwork.com
There was one (spaghetti squash alfedo) on a low carb show on the food network. Go to the website and searh "spaghetti squash".
I just got done eating it. I threw a couple of stewed tomatoes on top of it. it was pretty darn good
