Ok for breakfast I used a little smart choice in skillet beat 2 eggs added drained spinach and sprinkled a little low fat cheese on top and had (yuck) V8 with it hehe
I am wanting some lunch ideas I have a TON of cans of water packed tuna but trying to think of how to make it not be so drab or any other lunch ideas would be greatly appreciated. Thanks |

| you are allowed a tablsp of regular mayo or 2 tblsp of light may, so you can make a tuna salad with celery if you like. In P1 we tended to make it with a little olive oil and put a healthy portion on top of our lunch salads. maybe a tuna melt on top of zucchini planks (lengthwise slices) with tomato slices on top? |

Tuna is actually quite nice when mixed with a little mayo and some chosen spices - sort of like Coronation Chicken, except with tuna. Then you could have other SB friendly spicy things, such as curried/spiced eggplant, courgette, onion - or use celery and cucumber to scoop up the tuna with.
Mmmm...I just made myself hungry! |
