I am loving this whole new way of eating and find the plan pretty easy to stick to. It's been 6 wks now and I haven't screwed up yet! It hasn't been too hard for me to stick to eating the right stuff I guess because I'm feeling so good. I don't miss the sugar highs and lows at all. I was a major sugar addict and I feel really free and in control now.
One thing that I've noticed lately though is that I'm getting tired of preparing my meals. It does take extra time (and money) for me to eat well and sometimes I'm not in the mood. Last night I didn't want to cook anything and all I had for dinner for a bowl of Kashi Go Lean with FF milk. I had a slice of microwaved cheese with natural peanut butter for a snack but that was it. My quick and easy meal fix has been a caesar salad but even that is getting old. Does anyone have any new and exciting (and easy) meal options? I really do love to cook but I guess with summer here and the heat I just haven't been in the mood. Thanks! |

elaine - I just posted a similar "but" in the recipe section yesterday - my plan for now is to use rotisserie chicken and lots of salads, frozen individual pieces of fish [saute or bake], frozen cooked shrimp.... I'm also tired of cooking, tired by the heat and long work days...my thought is - if I can get thru a couple of weeks like this, I can re-program my cooking genes!
I was on a kick of having poached eggs at night for a while - usually just with some sauteed veggies - mushroom, onion, spinach - all prepped and cooked in less than 20 minutes. I like eggs but not at breakfast - so they make an easy tasty dinner sometimes. |

It's this Texas weather. It's hot hot hot here in Dallas, I can't even imagine what it's like down where you're at. I love grilling but doing so with this heat is like standing in a furnace! Your ideas are great. I pick up a rotisserie chicken about once a week and that works great. I also just bought some frozen grilled chicken breasts. Just micro and they're ready to eat. I haven't tried them yet but will let you know. I've been eating a poached egg for breakfast every day. Works great but I had to scramble it this morning for some "variety". lol |

Just a note..... if you plan on using rotisserie chicken make sure to read the ingredient label.
Many times the chickens are injected with flavoring solutions (or basted with) which contain sugars, lots of sodium, etc.
You also want to watch for partially hydrogenated oils....
Make sure you remove the skin...
.........then whatcha gonna do with the dark meat?? :wink:
A better idea may be to bake (or grill if you don't want to use your oven) a bunch of breasts yourself ahead, and then dice them, shred them, whatever.... to use in recipes during the week.
That way you know what you are getting.... and won't be tempted by the skin or the dark meat. |

Sometimes I really miss the dark meat and the skin! In my house the dark meat goes to my BF and my dachshund gets the skin! We're all happy for the most part.
I'll check the labels in the future on those rotiserrie chickens. Thanks! |

There are a lot of easy, summery recipes.....
Salads are big at my house in the summer (you can throw just about anything in a salad) ..... plus salad doesn't have to be "lettuce or spinach"...

using the SB friendly ones... or making them that way.
There are a couple great recipes in the recipe summary for "faux" potato salad using cauliflower rather than potatoes.
Another favorite of mine is a big, tuna salad stuffed tomato.
I also grill a lot during the summer months....
Leftovers are popular too..... just heat up the house (or grill) one day and make extra...
It gets easier! :) |

| Thanks, I am going to check out the recipes and make an effort to get on the ball with cooking more things. I'm fully commited to this now and know I can't survive the rest of my life on caesar salads and poached eggs! :) |

skin to beaglet and dark meat to SO....I'd like to try some of the grilled chicken breast at Costco - nearly bought some last night, but I hate to buy the big bag then not like the texture.
right now I've got quinoa with onions, pepper, and mushroom cooking, will toss on a handful of the chicken and nearly cooked broccoli at the end to steam. |

| It wasn't too hot yesterday (only 95) so I decided to grill a couple of sirloin steaks with mushrooms, peppers and onions. Had it with a salad and it was good. I have to check out quinoa. I've never had it and don't even know what it is! |

It's a seed [I think] counted as a grain on SBD - kind of nutty and very quick - ~15 minutes. I buy the Inca Red version, there is a white one as well. oh and it's pronounced Keen wa [or something like that!!!] I was pronouncing typical south texas redneck - qui no a :oops:
the one at HEB that I get is pre-rinsed. A lot of recipes will tell you to rinse it - probably the kind you get from bulk bins, but this is ready to cook. |

tabbouleh (cracked bulghar wheat) salads are a good cool/room temp grain for the summer too in place of the mac/potato salad standards. One mix we use is just add boiling water add some extra cukes and 'maters and cool in the fridge for a few hours. Still just a side though, not a meal. You can make a cold quinoa salad too with different stuff in it. Whole Foods has one in their deli case usually with soy beans, corn, peppers and some other stuff. I'm sure there are some recipes online too.
there was a summer salads or summer foods thread in the Recipe section not too long ago as well with a variety of ideas for the hot weather. |

red, I thought about buying the mix (rather than try to gather all the spices/flavors) and just add fresh veggies.
that sounds like a winner. I haven't bought groceries in nearly 3 weeks except my veggies cause I was gone on vacation....so it is definitely time to empty and restock the fridge. I hate to admit there appear to be scientific studies going on in the cheese drawer.... |

Debby that's funny...lol My veggie drawer used to look like that at times but not lately.
The salads sound so good. I vowed not to go to the grocery store again until Saturday though. I seem to be there all the time lately as I can't seem to keep enough eggs, cheese and FF milk in the house! |

| look at the serving suggestions on the box, they usually have ideas for added veggies, but it usually comes down to chopped/diced, cukes, tomatoes and carrots for us, and maybe a little extra fresh mint, although one mix has a fair amount of mint in it. (I get Casbah and Near East mixed up and never remember which one we like better and use more.) |
