tho in order to make sticky rice most place will add lots of yummy sugar. not that i'd let it stop me, but you should be aware of that.

aren't brown rice and the brown sushi rice 2 separate types? I thought I remembered a conversation about that with someone who ate/made onigri - I'm thinking it was iduckie...

yes sushi made with brown rice is fine

however sticky rice even if it's sticky brown rice is not a good idea.

that may have been my confusion - so one must ask sushi chef which brown rice they are using!

my favorite sushi place doesn't offer brown rice, and my favorite rolls are deep fried anyway....so I think they are far far down teh line for me!

sticky rice is more common in Thai cuisine, not Japanese. sushi rice is a short grain rice that does get a bit sticky when it is cooked, but also has vinegar, sugar and salt added to it to make it sushi rice. I don't think you would find sushi chefs using anything other than japanese style short grain rice for sushi. Most won't even use brown rice as it tends to fall apart if they do and it has nothing to do with the traditions they were trained in. making the rice properly is a big thing in that culture and typically where the apprenticeship starts to become a sushi chef. sushi IS the rice. the fish without the rice is just sashimi. Jams is probably the sushi expert on the board anyway! ;)

Don't have much to add. My .02 has always been that there is relatively little rice in a roll of maki. It's not like you are eating a bowl of it. I've always found that I can eat sushi in obscene quantities and not really notice any bloodsugar issues at all. I certainly wouldn't hesitate to enjoy a meal at a sushi bar if your eating is on track and you are solid with SBD.
