oyakudon is normally on top of rice, but i find it is yummy on it's own with a side of veggies. will be making some this week!
serves 4:
2 chicken breasts- cut into chunks or strips
1 onion ( i use yellow or white)- cut into 1/4 or 1/2" half rings
4 sprigs of green onions/scallions- cut on the diagonal
4 eggs, beaten
1 cup of water
1/2 tbs or so of dashi (can get at an asian market)
2 tbs of soy sauce
dash of splenda
put chicken, onions and scallions in a fry pan and fry for a minute.
add water, soy sauce, dashi and splenda and keep on medium high heat until boiling. once boiled, lower temp to simmer.
once simmering, add beaten eggs. i swirl the eggs around with a chopstick to make sure the eggs get in between all the chicken.
once i have swirled it, i cover the pan with a lid.
cook until egg has been cooked!
then eat. yum.......... |
