Difficult potluck issues

Ok, I have a doozie (sp?) here.

We're doing a birthday potluck next week. It's for a Jewish woman who follows some strict guidelines, including the "no meat and dairy within so long of each other" one. So, we're doing all non-meat dishes.

I need a potluck dish that:
- is SB compliant (for me)
- has no meat or meat products in it (dairy is ok)
- is interesting enough that everyone will enjoy it, but no one gives me crap for bringing something "too diet-y"
- it's CAN be something that needs to be refrigerated, but we usually haul everything out and sit it on the counter for 2-3 hours, so it probably shouldn't be too susceptible. (So, probably no mayo.)
- probably not a dessert, because I want to be able to eat quite a bit if there's nothing else there for me to eat

I can do anything - salads, side dishes, entrees... I just don't want any complaints that I brought something no one will eat.

Thoughts?

Assuming fish is OK, you could bring a Nicoise Salad. There's a recipe on p. 147 of the old SBD book, but you could easily create your own recipe.

Here is a copy of my list that I posted in another thread just this past week asking for cookout recipes. We love them all:

Overnight Coleslaw: great because you can make it ahead and everyone that I have served it to love this as well.
Pepper Pea Salad: I love it--and it is pretty to look at
Cucumber, Apple Radish salad: use English (the kind wrapped in plastic) cucumbers because it is less watery

Also some appetizers are great for cookouts. These are my favorite ones to take to parties and even serve to company at home. They are always a hit.

Do you have a crockpot? If so, here are my suggestions:

a vegetable chowder
SB vegetarian baked beans
whole wheat/cheese/nsa sp sauce/extra veggies baked casserole
crustless veggie quiche-type thing (baked eggs, cheese and veggies to scoop out)

If no crockpot...

Roasted veggies (mix of veggies roasted with EVOO and garlic)
Fruit kabobs with lemon yogurt for dipping
Fresh salsa and guacamole with baked pita chips
Bruchetta with ww toast triangles
3 bean salad

Bring a combination of things so you can be sure you have choices!

Hummus is always a hit. 3 bean salad is filling, and it is making a comeback in popularity. A jelied salad with cottage cheese has been keeping me alive since I started SB.

Whenever I go to gatherings, I usually bring fruit salad (as Nessa suggested). I also bring canned whipped cream and put it on the side for those who want it. I do all fresh fruit and it's delicious. But that's usually w/ me assuming (or knowing) that there will be other things there that I can have.

But I also second the suggestion of some kind of bean salad. I'd put some reduced fat cheese in there too [that's okay right?].

And I would assume there would be a tossed salad. Someone's going to bring it, right? :D (hopefully!)

I like the 7-layer dip. Here are the layers:
1) FF refried beans ( I usually mix some Taco Seasoning in with them)
2) LF sour cream
3) Guacamole
4) Salsa
5)LF graded cheese
6) Chives or green onions
7)Tomato's chopped

No cooking require. I would serve this with raw veggies and maybe some tortilla chips for those that would be interested.
