I'm having a cookout next week and I'd like your suggestions for some good tried and true recipes. I've made the broccoli salad and that was a big hit. What are some other good alternatives to the ever popular potato salad and pasta salad?

tabouli or tabouleh is one of our faves. we always add chopped cukes and tomatoes usually too.

I know it can be time consuming, but if you read through many of those threads, you will get people's opinions of recipes... suggestions, etc. All of the responses are very helpful in finding recipes that you will like! And many of them are tried and true.. just gotta read through to find out which ones! 8)

eta: also there are "favorite recipes" linked at the top of the first page of the recipe summary. you may want to check that out as well.

Here are a few of our absolute favorite salads and appetizers to serve (other than lettuce salads).

Asparagus and Yellow Pepper salad. I even use both red and yellow peppers for color. Everyone that I have served it to or given the recipe to loves it, especially the dressing. I have use fresh squeezed lime juice and have also used fresh lemon juice in the dressing, and we liked both of them. I also cut my peppers into strips about the same size as the asparagus pieces and/or onion slices. I even make slivers of parmesan to put over the top for a change of pace instead of grated paremsan.

Overnight Coleslaw: great because you can make it ahead and everyone that I have served it to love this as well.
Pepper Pea Salad: I love it--and it is pretty to look at
Cucumber, Apple Radish salad: use English (the kind wrapped in plastic) cucumbers because it is less watery

Also some appetizers are great for cookouts. These are my favorite ones to take to parties and even serve to company at home. They are always a hit.

Another vote for the roasted asparagus and pepper salad- I just made that tonight! It is really good ,can be made ahead and stored in the fridge. I also tried the cheesy tomatoes, and those were also tasty. They could be done on the bbq on foil.

I completely forgot about my all-time favorite appetizer to take to parties. It makes a lot and people love it. I even loved it back when I didn't eat beans!!!! I know that corn isn't really a good vegetable on SB, but a little bit now and then would not be bad.

TEXAS SALSA, P2 because of the chips & corn [recipelover's favorite]

Put in a large bowl:
--1 can black beans, drained (I also rinse)
--1 can pinto beans, drained (I also rinse)
--1 can white corn, drained
--1 can jalapenos
--1 sm. jar pimiento (optional)

Add to the bowl:
--1 c. red onion, chopped
--1 c. green pepper, chopped
--1 c. yellow pepper, chopped
--1 c. red pepper, chopped

Mix in saucepan and bring to boil:
--1/2 c. vinegar
--1/2 c. vegetable oil
--1/2 c. sugar (use Splenda)
Cool dressing.

When cool, pour over mixture and marinate 24 hours in refrigerator. Serve with Scoop Fritos or Scoop Tostitos for non-SBers and homemade whole wheat tortilla strips for SBers (or buy some that are somewhat SB friendly).

This makes a lot!! It serves many and the best thing is that you make it ahead of time.

Ooo - I've made that before. It's excellent! I love cilantro so I always chop up a bunch and throw it in, along with some lime juice - it goes well with the flavors.

put some mango in there!!! I had mango salsa with grilled chicken last night and it was yummy. My SO does a much better job picking out mangos than I do - mine are usually all fiber-y and bitter

Here's a grilling recipe I found at Food Network and it's perfect for SB.
GRILLED BABY VEGETABLES

6 baby zucchini, halved lengthwise ( about 1/2 lb.)
2-3 baby eggplants, thinly sliced
12 crimini mushrooms
1/2 lemon juice
2 rounded teaspoons dijon mustard
2 tablespoons grill seasoning (Montreal Steak Seasoning works well)
1 tablespoon Worchestershire
1 lg. garlic clove crushed
3 tablespoons evoo

preheat grill
place vegetables in large ziplock bag
combine all other ingredients in small pan and stir well
add these ingredients to bag, seal and ensure all vegetables are coated
grill vegetables about 2 minutes on each side

I use wire baskets I bought for grilling vegetables.
another method that might work is wrapping in foil and laying on grill
