I am mostly vegetarian and love legumes like chick peas, moong daal, red kidney beans and all that counts for legumes. My question is in phase 2 instead of eating one piece of bread, can i swap it with more legumes say 2 cups :?

No, you really can't swap legumes with bread. One is considered a vegetable and one is a grain/starch. Legumes should still be 1/3 to ½ cup per sitting as part of your veggies. Grains/starches should be added as part of transitioning into p2.

You don't have to eat bread, though - you could have whole-grain cereal or a starchy vegetable such as sweet potatoes, winter squash, beets, or green peas.
