My family & I began phase I of the south beach plan yesterday. The chicken breast stir fry recipe amazed the kids. "This can't be healthy, ma"! I think I'm definately onto something here. I walked quite a bit yesterday. Today I hope we'll make it out, since they're calling for rain.
I packed Bobby (DH) Tuna salad on a bed of Romaine Lettuce, SF jello with a dollop of fat free whip cream and Celery & PB. He seemed pleased but keeps teasing he will get into the donuts at work. I know him better though. Dinner plan for this evening is Dijon almond chicken, cauliflower mash & Buttered asparagus. I can only hope for another family hit.
Goals today: Take my vitamins; drink 62 oz water & exercise on my stepper or take a walk |
