Started SB 5/5/08 and loving it

Hi all,
I have been reading the forums rather religiously and thought it would be nice to use this as my food journal. I have seen other SBeachers critique menus and hope to get feedback on mine. Here is my background.
I am 31 years old, Female, 5'9", currently 186 lbs.
I have been fit to very fit from adolescence to around the age of 29. I have always been rather active, with running being my most common activity, but also have done kickboxing, weight lifting, aerobics classes, and cycling.
Around the age of 29, I got rather sick. . . it ended up being uterine fibroids (sorry if this is too much information) and I had surgery in November of 2006 to get them removed. From the time I was diagnosed until the surgery, I put on quite a bit of weight - maybe 20 to 30 pounds. During recovery from the surgery, I continued to put on weight, ending up putting on about 50 extra pounds.
All of that is to say that I started working out and exercising again a year ago. I gained some muscle, but did not really lose much fat or weight. I have finally taken a hard look and realized my metabolism isn't what it used to be and maybe it's now time to do something about how I eat as well. That's why I started South Beach!
I am on my second week of Phase 1 and I love it so far. It hasn 't been as hard as I imagined and I have lost around 8 pounds so far. I can see a slight change in how my clothes fit as well. It's very motivating.
Ok, that's me. . . here is my menu today:

BF:
2 scrambled eggs, 1 piece canadian bacon, 1 can V8

Mid Morning Snack:
Skipped - no time :(

Lunch:
Salad from Subway - Lettuce, tomato, bell pepper, jalapeno pepper, bananna pepper, black olives, fat free ranch dressing

Afternoon Snack:
Mozarella Stick

Dinner:
1 Cup Homemade Soup - Black beans, Ground turkey, Tomatos, Green Beans, Green Peas
1 Vegetable Quiche Cup

Day 9:

Terrible day, feel like I did a very bad job of eating, though all were SB friendly foods. . .

BFast:
Two Vegetable Quiche Cups; 2 pieces turkey bacon

Snack:
Skipped

Lunch
Two Vegetable Quiche Cups (all I could find in a pinch - gotta work on cooking and having more food available)

Snack:
Laughing Cow Cheese

Dinner:
Black Bean Soup (black beans, rotel, onions, green peppers, ground turkey, green beans)

Snack:
Sugar Free Fudge Pop

Day 10:

BFast:
Turkey Burger
V-8

Lunch:
Hot Dog on Bun
Chocolate Chip Cookie

Snack
Mozarella Stick

Dinner
Bean Soup (see day 9)

Snack:
sf frozen fudgesicle


So today, I figured out that when I go off task, I really go off task! Didn't cook breakfast, so grabbed the first think I could find in the fridge. . . went to a cookout for my students and left my lunch at school. . . starving so I caved and ate the hot dog. . .
Will get back on track tomorrow, I hope.

Each day brings new issues!

You sound like you're trying to lose the same amount of weight I am. It is alot harder to stay on track then I thought. I think the main thing is you can see you can do this. It is possible.
