I just had a Kashi meal for lunch (I know it's not a great choice, but I was limited on choices since I wasn't coming from home. I added a huge salad with some lf cheese and lots of veggies, so I'm ok with that as an emergency-only choice.) But I LOVED the pilaf that was in it.
I read the box, and the first ingredient was "Kashi 7-grain pilaf." I looked it up, and it looks like it's sold mainly as a breakfast cereal (used to be called that) but now it's name has changed. Since the ingredients are only the 7 whole grains, and it's on the approved cereal list, I think this would be a good substitute for rice as a starchy side. (The hot cereal is just the grains - no sweetners or flavorings, so I don't think it's just for breakfast.)
Has anyone had this stuff? I was wondering if it would be worth a shot, or I should avoid it? Any good or bad experiences? (I searched, and found lots of people who used it as cereal, but no one said anything about using it as a side.)

The pilaf is fine as a side dish as well. Just watch your portions.
That's another problem with the Kashi meal-- the grain portion is too large, and it has very little protein or good fats (in addition to the veggie issue that you already mentioned). It isn't acceptable even in a pinch, unless you only eat half and then supplement with lots of veggies, some protein, and good fats. |
