i tried mahi mahi for the first time - they have/had it at Costco for about 5.25/# and it is awesome!!! I really don't use recipes most of the time, but just seasoned with salt pepper, greek seasoning, rubbed with olive oil and pan seared it, then stuck it in a 450 degree over for about 5 mintues [which was about 2 minutes too long!!!] then deglazed the pan with a little chicken stock, smart balance and capers....OMG it was yummy. Even my teen age son who thinks Captain D's is the best fish ever wanted more.
A good way to cook tilapia and other thinner fish is to put it in foil packets with seasoning and quick cooking veggies and bake. I'm sure there's at least one of those recipes in the recipe thread. I've learned to love fish! |

I got a great Salmon recipie :D
1 Salmon fillet
1 Chilli
1/2 small Lime
Grated ginger (mines from a jar)
PLace the salmon fillet in a steamer , I have just bought one its brilliant !
take the ginger and chop finely.
spread over the salmon
Finely chop the chilli and spread over the top. (the steam calms the chilli so you may need to add extra ! :twisted: )
use three slices of lime and place on top
Squeeze the rest of the lime over the fillet and steam for about 20 - 30 mins
Enjoy ! |

This is one of my fam's favorites-
On the salmon fillet, coat it with some fat (I use a bit of butter if that's my fat for the meal, or ICINBS if I am using some fat elsewhere- both are great), sprinkle it with low-sodium soy sauce, and rub in some minced garlic. Try to shove some down in the cracks in the fillet.
Broil or bbq til done- salmon cooks up quickly, so keep an eye on it. Salmon that is just done is still very moist, but flakes easily.

I often use olive oil and ICBINBS (did I spell that right?). Oil makes it richer and helps it stay moist, and the ICBINBS adds flavor. You can also dress the cooked salmon with walnut oil or another healthy salad oil. The seasonings you suggest sound great! I have enjoyed salmon seasoned with lime, parsley or green onions, nutmeg, and capers - it's based on a recipe in The Joy of Cooking. |
