1. I was trying to find out if you have to stick with the actual menu in Phase I, or if you can look at the okay list and improvise the menu (keeping portions and all in stability).

2. I was also wondering why they say to eat all you want, but the size will indicate "1 cheese stick," etc.

3. Are veggies considered eat whenever or where ever?

you do not have to follow the menus in the book they are a suggestion. In fact in the new book he even says that.

you CAN eat all you want but you should only eat to comfortably full... not stuffed.... so if you eat 1 cheese stick and a green pepper and are still hungry you can have another green pepper and then if you are still hungry have another cheese stick

veggies are pretty much unlimited and eat what you want when you want.

I agree - the rule of thumb is "all you are hungry for," not "all you can." The keys are:
1. Stay well-hydrated. (It's common to mistake thirst for hunger.)
2. Eat plenty of vegetables. See if they will satisfy your appetite before you load up on calorie-dense foods such as cheese, meat, nuts, beans, or dairy products.
3. Eat one serving, then wait to see if you are still hungry.

In order to get a better idea of amounts and proportions by major meals and snacks, find the P1 FAQ sticky thread and find the links to the threads for the P1 foods list and esp. the meal planning template (how to adapt your meal plan). That meal template really helps plan out a daily menu and make sure you are getting as good a balance of carbs, proteins and fats as you can in P1. It also has some suggested serving sizes on the more calorie dense items and the food lists identifies the suggested limits on certain food types like nuts. Veggies are really the only food with minimums and no maximums though.
