I just found this recipe at 101 cookbooks website - it's for sure a p2 recipe, but it sounds so good! I love guinoa anyway....

Warm and Nutty Cinnamon Quinoa Recipe
I used a red quinoa here, but you can use whatever kind you like, white/buff colored seems to be the most common. Also, a few notes and tips from the book: low-fat soy milk may replace the low fat milk, blueberries may replace the blackberries, dark honey may replace the agave nectar, and walnuts may replace the pecans.
1 cup organic 1% low fat milk
1 cup water
1 cup organic quinoa, (hs note: rinse quinoa)
2 cups fresh blackberries, organic preferred
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans, toasted*
4 teaspoons organic agave nectar, such as Madhava brand

FWIW, the agave will be lower GI than the honey. Walnuts will have more omega oils than the pecans. Sounds kinda like my oatmeal though! ;) Just a different grain, I mean seed! ;)

Also since you are going to end up with about 3 cups of cooked quinoa, would guess that would make around 6 servings? Does that sound about right?

speaking of agave- when I was on SB last winter, I bought agave, stuck it in the pantry and never used it - never opened it - wonder if it is still good. I thought something like the sf maple syrup would also be good in this. I can't wait to try it, but will wait until I'm up to 2/2.

I would think it would be fine. You could probably email the mfg. if they have a website with contact info to look up and check with them. One of the nice properties of it is that it doesn't crystallize and harden like honey either. SF pancake syrup would probably work OK too. (Sorry as a born and bred ex-pat New Englander, I can't call that stuff "maple syrup"! There is nothing "maple-y" about it!)

I love quinoa and usually make it plain for dinner. With the leftovers, I'll add agave nectar and some nuts and have it for breakfast. I love the look of this recipe and will definitely try it. Thanks for posting.
