Belgium Waffle Recipe Problem

Hi All!

Okay, so I made Belgium Waffles (2 eggs, 1 spoonful of lite ricotta cheese, splenda, cinnanmon and nutmeg)...I didn't have a waffle iron the first time I made the recipe, so I used a griddle and it came out like a flat pancake...very good!!! So I decided to go out and buy a small waffle iron (after hearing someone else used one) because I thought this was a recipe that I would make frequently enough. So I'm all excited to make my waffles and what happens? The batter just stuck to the iron and latched on! There was NO WAFFLE!!!! I was so disappointed! What did I do wrong? I followed the recipe! The only thing I didn't do was spray pam on the iron (I made regular waffles for my kids yesterday and used pam and there's cam out fantastic)...maybe that's where I went wrong? Because it's a non-stick iron I thought it would be alright without the pam. I don't know, but this waffle did not fluff up AT ALL, it just disintergrated javascript:emoticon(':shock:')

Has anyone here had a similar problem? If so, any insight on what I did wrong?

Even though it's a non-stick waffle iron, you need to spray it with Cooking oil every time you use it.
I have been making pancakes and waffles for 37 years and I always have to do so.

Try it again, make sure you spray BOTH SIDES of the waffle iron or the waffles will stick to either side. Also, it helps if you pre-heat the iron for at least 10 minutes and don't open it until the waffles are done, or when the light goes off. Don't pick too early or you end up with a mess!

I made this recipe a few weeks ago and loved it (I did spray the waffle maker)...so I thought I would try it again. I put cut up strawberries in it since I am in P2 but forgot to spray the waffle maker...HUGE mess. I think not spraying it along with adding the strawberries contributed to the mess. I cleaned it up and started over--without the strawberries and with spraying the pan. It didn't make a mess and it was in the waffle form but I thought they were flatter than the first batch a few weeks ago. I swear a few weeks ago, it fluffed up a little. I am going to try it again and put the waffle maker on a hotter setting to see if that helps.

Not only you need some "good" fat, but also try a little baking powder, depending on the amount of batter maybe 1 tsp. and a pinch of salt.
I actually add some flaxmeal to the butter and they come really great :wink:

I've never used that recipe, but we make ww sourdough waffles from scratch, and we've never sprayed the nonstick waffle iron. It never sticks. There is oil in the recipe, however.

for all your responses! When I make them again, I will definintely try a spray for the iron! I'm sure that's why it didn't work!
