1 lb. frozen fish fillets,defrosted (telapia, flounder)
1/2 red pepper,diced
1/2 red pepper,sliced
1 green pepper,diced
1 can whole tomatoes,drained and diced (I also made it with salt/sugar free tomato sauce instead and it was great)
1 Tbs EVOO
2 Tbsp paprika
Garlic powder/pepper to taste
Mix oil and paprika in frying pan. Add tomatoes,green pepper and the diced red pepper,saute for few minutes. Add spices and mix. Roll up each fish fillet and add to pan. Lay sliced red pepper on top of fish. Cook over low flame for 45 minutes.
