Baked Green Beans with fresh cream

I tried this today and I really liked it!

Ingredients

100grams bacon chopped
1 tub fresh cream light
1 onion or leek
500 grams green beans
fresh black pepper and salt
2tbs mayo light
1ts milk

Boil or microwave the green beans until tender. In the meantime, mix the fresh cream, mayo and milk in a bowl and whisk with a fork until blended.

In a skillet, fry the bacon and the onion/leek together .. no need to add oil or butter. Add the fresh cream mixture and simmer for 1 minute.

In a dish, throw in the green beans, top with the sauce, mix well, cover in foil and bake for 25 minutes in a 180 degrees celcius oven

Delicious.

It doesn't seem to have done MaltaGuy any harm though :wink:

If I was making it I'd probably cut down on the bacon though (I'm assuming he used Canadian bacon) and use Greek yogurt instead of the cream.

Would it really be that bad if you used low fat ingredients? I'd make sure I ate it with a salad or other veg, would only have a little bit of it. I'm sure I've seen worse recipes on here!

I'm sure you can substitute items for this, such as turkey bacon for bacon, and since he is saying "1 tub of cream light" this sounds like maybe sour cream? I don't know if heavy cream comes in a tub in Malta, but where I have seen it in the US, it's always in a carton.

I think the tub of "fresh cream light" refers to light or lowfat creme fraiche.

Sorry I forgot I had this post here ... so let me try and answer some of your questions.

So as far as the "light fresh cream goes" ... I found this italian brand, it's called Hopla. They have this light version which is "based on skimmed milk and vegetable fats, only 13% fat". A tub has 100ml only, 155 calories, 3.4g protein, 6.4g carbohydrates, 12.9g fat. Actually it's not so fresh after all, because when you buy it, it's not refrigerated.

Yes, I used canadian bacon for this recipe (I was never able to find Turkey bacon here in Malta).

And also did I mention that this recipe makes 4 servings? So actually, you're only getting 1/4 of the stuff the "light cream" has, which is not that bad.

Yes you can substitute this cream with Plain yoghurt, however I would recommend to add some sweetner, otherwise it will be too sour.

I'm on phase 1, and so far I have eaten this twice, and I didn't stall, nor did I experience any cravings. I guess sometimes you just have to bend a few rules and make a recipe work. The original recipe calls for full fat cream, streaky bacon, and a ton of butter!

Also, I'm not sure if I'm using the word "cream" properly. It's confusing when you have to try to explain something across cultures, especially when the same product has several different names! Ok .. are you guys familiar with besciamella? Usually it comes in a carton, but Besciamela [the regular one] is full fat. It's that thing you add when you're making pasta with white sauce [onions, bacon, mushrooms, "cream"]. No it's not pre-made like an Alfredo White Sauce. I used to buy something similar when I lived in the States, but I forgot what it was called.

Does it all sound beachier now? Kimboroni .. you gotta treat yourself once in a while, without bending too many rules :-P And again, as I said, this recipe yields four portions. Trust me, it gives green beans a whole different taste.

I looked up Besciamela and came up with the fact that it is a white sauce or bechamel sauce. It seemed like all the recipes that came up also had nutmeg in the sauce.

I would also think that you could use some low-fat cream cheese and some skim milk to make it into a sauce too.
