I tried to eat the ricotta creams last time I did phase 1. Couldn't stand them. I guess it was the texture? I even put the stuff in my blender, trying to get it smoother....... I love ricotta in Italian food, but as a dessert? LOL
Then, day before yesterday, I saw someone's recipe for the one that has pb in it. And a little vanilla and splenda. There wasn't any exact amount, so I just guessed too. About 1/3 cup of ricotta, mixed with 1 tbsp of natural pb, a couple of packs of splenda, a little imitation vanilla (its all I have) and a dab of heavy whipping cream. Just a dab--to make it a little smoother. Oh, and I tossed in 3 pecans that I broke up. The original recipe said to add a few chocolate chips, but I didn't have any of those either, so I used pecans.
And OMG, this stuff is GREAT! It's not weird either! I couldn't wait to get home from wal mart this morning so I could have some!!! I can't believe it.
You know, I think ricotta cheese isn't really a cheese, but isn't it more like the whey off the milk? Wow, I am surprised.... I have a new favorite treat!
Has anyone tried mixing in some sf pudding into it? For phase 2? |

Yes. You can check out the recipe summary. There is one called "cookie dough" with vanilla or white chocolate pudding powder, skim milk, ricotta, and semi sweet chocolate chips. There are also popular cheesecakes made with ricotta and pudding powder.
Oh and my suggestion -- use skim milk instead of the whipping cream. It helps to make it smoother too, but heavy cream is not allowed (too much saturated fat [and also tons of calories]) but skim or 1% milk are allowed (part of the 2 cups of daily dairy [goes up to 3 cups in Phase 2]). |

Thanks, NYGirl! I have a hard time going through the recipes, even using the search funtions 'this AND that' feature, LOL. I'll keep plugging through them.
You're right, the heavy cream is LOADED! But I bought it for my kitties, and I think I'd rather have the milk 1% for myself. ;) |

There is a whole section devoted to ricotta (dessert) recipes. If you use the ctrl F search function [ctrl + F then type in ricotta and click next until you come to this..]
