Hey guys! I have browsed the recipe links many times on here, but I wanted to get some opinions. I am looking for a recipe to make that is big enough to last all week (5 days) for lunches for 2 people. I realize I can double recipes etc, but I want to know what things will actually maintain flavor and not go bad if eaten all week. I am not a vegetarian but I am trying to eat less meat, and am not eating beef or pork at all. Any suggestions?

Eggplant or zucchini lasagna is a good choice, if you have a microwave to reheat your lunch. It's so filling you don't need very much. Meat is optional, but you can certainly use ground turkey or ground chicken - brown it and add it along with the sauce. I don't have a recipe for the zucchini version handy, but basically you just use zucchini in place of the eggplant.

| I made a crockpot veggie soup earlier this week, and it was HUGE. I ate off of that for quite a while. I modified and combined some recipes I found on here, and added my own spin. Basically, I threw lots of chopped tomatoes (canned,) zucchini, onions, garlic, mushrooms and celery into the pot. I added two cans of low sodium beef broth, TONS of Italian spices (oregano, basil, garlic powder, thyme, pepper, red pepper...) and then some browned ground turkey. (You could easily leave this out if you wanted.) I let it cook in the crockpot all day, then I added a can of kidney beans and a can of black beans and let it cook another hour. I served it with some fresh parmesan on top. |

Makes stuffed peppers and you can take one for lunch several times a week (there are several varieties of recipes for them in my recipe summary sticky--my favorite is Sloppy Joe Stuffed Peppers).
