So many things you can do on the bbq! I had bought a gas bbq and use it all year round.
Veggies
Eggplant, zucchini's and the like. Cut them in slices 1/2", spray them with PAM, or put them in a plastic bag and add some olive oil, and any herbs that you like ... and grill them on low heat. I just love them.
Veggie kebabs are also a great idea. If you are using wooden skewers, make sure you soak them in water overnight, so that they will absorb water and don't get burned easily on the grill. Again, basically any veggies you want, but the best are, shallots, whole mushrooms, cherry tomatoes, bell peppers, zucchini. I usually like to throw in some canadian bacon for flavour .. i just chop it up into like 1" squares, and stick it in between the different veggies.
Meat
There are tons of recipes for marinades in the recipe link http://www.southbeach-diet-plan.com/forum/viewtopic.php?t=21361
I like to melt some cheese on top sometimes, like blue cheese, goes really well with pork. Also, you can stir fry an onion and some mushrooms, and when the meat is grilled, put it on the top shelve of the bbq, top up with the onions and mushrooms, and add some cheese, close the lid, and let them sit there until the cheese melts.
You can also grill a lot of chicken breast on the bbq like I do ... then cut them into stripes, put them in zip lock bags and freeze them. They come in really handy when you are in a rush and don't have time to actually take out a chicken breast from the freezer, defrost it, cook it, and make a salad with it. All it takes is 2 minutes in the microwave :-) |

Buy a grill wok for veggies. They are pretty inexpensive. They are typically metal, square and have holes punched through them. If you buy a nonstick one, don't use your metal grill accessories to stir in it!
But it's great for grilling vegetables that might otherwise fall through or you just want to chop a bit smaller. Only veggies I can't do in it are green beans and asparagus as the little buggers tend to want to escape right through the round holes! Of course they are only plunging to a fiery death, but I guess they don't ever figure that part out!
We particularly like a mix of broccoli, cauliflower and brussel sprouts.
We don't really have any recipes. Meats (fish, chicken, pork tenderloin, steaks) get seasoned and thrown on the grill until done. (A good meat thermometer is a great accessorie too!) Pork tenderloin coated in a brown mustard first and then seasoned works well too! |

| I use aluminum foil wrapped around my veggies and steam them on the grill. I simply add some seasoning and a couple of teaspoons of water to the veggies, wrap/seal the veggies leaving a little extra room and throw on the grill. |

For phase two I have a grilled dessert.
One peach cut in half, pit removed. Throw on grill open side down for a minute or two then flip over and sprinkle a tiny bit of cinnamon on and let warm through. It is wonderful and tastes like peach pie. |
