Well, a big OOPS on my part today. I had some "Broccoli salad" and it was SO good - but it was sweet, so right away I knew I couldn't have much, but I wondered what was in it and how to make it SBD friendly. It had broccoli, bacon bits, sunflower seeds, raisins and some kind of 'dressing'. Anyone have a good recipe?

OMG! I know exactly what you're talking about. my mom used to make it all the time. the original recipe is:
Broccoli Salad with Raisins*
* bacon bits
* 6 cups broccoli florets
* ⅓ cup finely diced red onion
* ⅓ cup golden raisins
Dressing
* ⅓ cup mayonnaise
* ¼ cup plain, fat-free yogurt
* 1 tablespoon sugar
* 1 tablespoon apple cider vinegar
I would substitute turkey bacon instead of bacon bits, almond slices instead of raisins. For the dressing use splenda instead of sugar. You can probably also leave out the apple cider vinegar (I don't know if it's SBD friendly)

Good news - apple cider vinegar is perfectly fine for SBD. In fact, many people recommend it for health reasons, and to reduce the glycemic index of foods. |

Well I made it today and I used regular vinegar and it was SO tart!! LOL I guess I should have known apple cider would be the thing to use. The recipe I found had called for 1/2 CUP of sugar! I used Splenda and it was ok, but next time I will use ACV instead of regular - whew! It sure was yummy!! The recipe I had tasted omitted the red onion but it would be good either way. I have a dinner to go to tonight so I was better off without the onions. LOL
Yum Yum!! Oh boy this will be something that helps get me through and gets my veggies in!!
