favorite spring/summer recipes?

It's so wonderfully warm now that I can't bear to make any more soups or chilis. Does anyone have any favorite warm weather recipes? I start P2 tomorrow, so anything P1 or early P2 (no more than two P2 ingredients in one recipe) is very much appreciated.

Cucumber Raita! It's Indian, and it's eaten cold. In India a lot of very hot foods are eaten, and this yogurt dish helps to cool off the palate.

You take a cucumber and if you like, take the seeds out. Cut the cuke in your desired fashion. Mix up a little salt, cumin, cayenne powder, and fresh cilantro and stir it into some regular unflavored yogurt. Stir this into your cukes and top with more fresh chopped cilantro. This recipe can be varied in many different ways. There is no one correct recipe. It's like potato salad---many different ways to make it.

It's cooling! It's refreshing! And it's practically calorie free.

If you look at the Salads section of my recipe summary sticky, you will find a large number of assorted salads that can be used all summer. There are so many different variations using all sorts of vegetables and you will not tire of them. It's not just an ordinary lettuce set of salad links.

we like tabouli/tabouleh as a grain/starch side salad in the summer to replace the macaroni/potato salad stand-bys.

I love these threads - they make me rethink my menu! I like raita and tabbouleh but probably wouldn't have put them on my menu - wouldn't have popped into my head!

Summer - I love gazpacho, and I have a recipe for chilled cucumber soup made with buttermilk or yogurt that is awesome, one for chilled avocado soup....I usually combine the two and make my own version.

grilled chicken - make extra on the grill and have on hand for salads or wraps in p2. Grilled just about anything! I'll send SO to the meat market with a very specific list for my lean requirements and he'll grill all afternoon on Sunday, bag up servings and we're good to go - in fact, we probably need to do that this weekend!

I too love gazpacho and I have posted our very favorite Cold Cucumber soup in the soup threads.

And, don't forget the simple tomato salad: tomato slices, salt/pepper to taste, slices of fresh mozarella, drizzle on balsamic vinigar and olive oil and top with fresh basil.

There are also many chicken salads (without lettuce) that are good for summer. See the Chicken Salads section in my recipe summary sticky.
