If you have Dr. A's Book the official mashed potato recipe is in it ( I think)
But here is how I make mine
Steam or boil a head of cauliflower until soft , drain really really well, and put in processor with 1 can white beans ( rinsed and drained)
and whip the bejeebers out of it. I have a mini processor so it takes 2 times to get it all. some people use a blender. I was never able to get it really smooth with a masher or hand mixer. Add whatever you would put into mashed potatoes
some suggestions:
FF sour cream and chives, roasted garlic ,chedder cheese shreds,
I usually just use ICBINB and add something when serving.
I have some califlower in the steamer right now.
Your menus sound great. :) For me it is sooo important to keep it interesting. |

You folks bring tears to my eyes with your support! You have no idea how hard this is for me to do without any encouragement. I'm a pretty strong woman--I've lived alone most of my life (except when I raised my children), and actually I prefer living by myself.
But when you are trying to achieve a goal such as get a business off the ground or lose weight, exercise--anything where you need some validation--having someone give you daily kudos for your work, to encourage and support you is priceless. I can't thank you enough, and I hope that I don't fail and that I can some day be a role model to give others hope.
jogran, I have Dr. A's first edition. The recipe in it is really boring--cauliflower, butter substitute, milk, salt--I was looking for something that would really be a TREAT--and yours sounds right down my ally!
I've just never thought of using beans for a base for anything, so I'm really eager to try the brownie recipe--and now your recipe with the beans mixed with the cauliflower sounds delicious! It will give the cauliflower mixture some body, and the extras such ICBINB, garlic etc should give it some "oomph"....oh, and I think I'll put some FF buttermilk on mine! That should really give it a "rich" taste.
I'm with you--I need to keep the food interesting, too or I fizzle out. Thanks for the recipe ideas! :D
Today's food:
B:
Sausage and scrambled eggs (with a little 2% cheese)
1 cup ff buttermilk
S-Pistachios
Lunch:
Big salad (romaine lettuce, small tomato, cucumber) with a little 2% cheese and ranch dressing
S: baked pork skins
Supper:
Pork chop
Broccoli and cauliflower with lemon and herbs.
Portobello mushroom

2 Black Bean Brownies--So? Don't give me that look. I looked up the nutrition on them and they are fine!!! :wink:

Hi Gaia,
Dinner for breakfast is one of my favorite meals! Have you tried the mashed potato recipe that Jogran posted? You should! My daughter and I had them for lunch today and she totally believed they were the real thing! Delicious!
Anyway, I just wanted to let you know your posts and your attitude are very inspiring!

I haven't tried the recipe yet because I haven't been to the store and I don't have the ingredients. but as soon as I go, I'll be sure to pick up the white beans and cauliflower!

| Well, I just tried the Black Bean Brownie, and I have to say, it's not nearly as disgusting as I thought it would be... in fact, I've had two of them... :lol: Pretty darn good!!! |

I'm Making a pot roast with lean beef for Lunch and Dinner. And I'll have the "faux mashed potatoes" with it along with broccoli and Portobello mushrooms (they've sort of became my potatoes.)
B: Link Sausage and 2 eggs
S: ham rollups with olives
L: Beef strips, portobello mushrooms and faux mashed potatoes and broccoli
S: ff buttermilk
D: (see lunch)
S: A Huge Slice of Pizza with pineapple slices.... :lol: Just joking. I'll be good. Probably will have a Bean Brownie and pretend it's a pizza. :lol: |

I'm glad to hear you like the brownie.. tomorrow I'm going to try the muffin (cinnamon) made from northern beans. So you give me some hope :)

Ya---having fun....trying to forget my cravings--dying for a pizza, some rice, a baked potato. LOL
Anyway, tonight I'm going to rinse Northern Beans and use them in the place of white beans with cauliflower to make "mashed Potatoes"....I'll add a little mayo, some ff buttermilk, and fake butter to give it some "oomph".
I'm having beef roast and you just GOT to have taters with beef roast--I mean isn't that some kind of physical, universal law or something?
They better be good~ I report truthfully, not "wishfully" or "hypnotically". lol
The brownies on a 1-10, with 1 being gross and 10 being super scrumptious, I'd say the Black Beans are a 5. Quite "doable". And they are a sufficient snack. I especially like the heaviness of them--and the nuts and chocolate, of course. I also spritzed mine with IBTINB for a little "butter" hit.

gaia - back with a report on the muffins. I was very pleased. I'd say 1-10 about an 8. I added almond extract, vanilla extract and a little caramel sugarfree syrup. They really remind me of little pop overs (the airy breads). They were very light, but mine had a big hole in the middle - so I'm sure that's why.
My only comment would be not as sweet next time - way too sweet for me. It called for a scant 3/4 c Splenda. Which calculates to 18 packets. I used 15. I think next time around I'll use more like 12.
But all in all it definitely felt like dessert and definitely a treat. I look forward to trying other variations in the future. |

Good for you! Would you mind posting the recipe you used?
I made some faux mashed potatoes tonight and they were pretty good:
gaia's version of mashed potatoes:
Northern Beans (didn't have any plain white beans)
Cauliflower
1 Tbl Buttermilk
1 tbl mayo
1 tbl ICBINB
salt to taste
Wash Beans, cook cauliflower until soft. Blend Beans, add the other ingredients.
Mine was a little juicy, so I put the mixture in a small pot and warmed slowly so it released some of the fluid.
1 out of 10, I'd say a 7. If I didn't have such an adversion to beans and if someone else had cooked it, I would have probably loved it. LOL
Also, I had gravy off the pot roast, so that made it taste even more like the real thing!
I had enough to have dinner, lunch tomorrow and lunch on Tuesday.
I'm going to be honest here.....I don't know how long I can last without potatoes. I really miss them, and I know I can't go the rest of my life not eating them. :? They are one of my favorite foods.. :cry: |

I used one that I found here in the recipe forum -
4 eggs
1 can Northern beans drained, rinsed, drained again
1 tsp baking powder
pinch salt
flavors of your choice (spices/extracts)
1/2 tsp vanilla
2 T oil
scant 3/4 c. Splenda
Combine in blender (2 eggs, beans, ingredients, then last 2 eggs) & process until smooth. Pour into muffin pan bake 375 25- 30 minutes or until toothpick comes out clean.
I suggest doing a search for the Basic Sweet Version Muffin recipe just to see the 100 & 1 different flavor variations listed. |
