SBD Shrimp & Pasta with Basil - Serves 1, Phase 2
3 oz Shrimp, peeled & deveined
3 oz fresh Tomato, coarsly chopped (I use Roma)
1 tsp Olive Oil
1/4 tsp Garlic, minced
1 tbsp Green Onion, chopped
1 tbsp fresh Basil, chopped
1/2 tbsp Smart Balance Spread
1/2 cup cooked Barilla Whole Grain Rotini
Heat oil in skilled over medium heat. Add garlic and cook 15 seconds, stirring constantly so not to burn. Add green onions, tomatoes, basil and Smart Balance spread. Make a well in the center of skillet and add shrimp and cook until shrimp are pink - about 3 minutes. Mix everything together then add pasta to heat.
I used the brand ingredient I personally use but you could always substitute what you prefer.
