If you are not a big bean eater, I think black beans, chickpeas/garbanzos and edamame (soybeans) are some good "starter" beans. If you like southwestern flavors, black beans, with diced tomato and green pepper and salsa, mixed together and heated in a micro make a good snack. chickpeas go well in salads or can be made (or bought) into hummus and edamame is kind of fun to eat if they are still in the pod (don't eat the pod!) or can be used like a veggie as well, although they shouldn't be the only veggie on the plate.
Homemade chili is always a good P1 food too! ;) |

| I have been loving roasted chickpeas! They are great on salads as "croutons", too. I have made roasted black beans for this as well. There are lots of recipes for these in the recipe sticky. My 8 yo daughter even loves them! |
