Zesty Lemon Broccoli Salad
1 head of broccoli or 4 cups florets
1/2 cup Italian dressing
1/4 cup olive oil
fresh squeezed juice of ½ lemon
1 tsp pepper
dash of garlic salt
1/2 cup chopped black olives
1/2 cup diced tomatoes
1/2 cup diced mushrooms
1/4 cup chopped green onions
1/4 cup finely chopped celery
1/2 cup shredded parmesan cheese
fresh ground pepper to taste
Slice or break apart broccoli into bite-size pieces. Steam on high for 3-5 minutes (to a still-crisp texture and bright green appearance). Mix all vegetables together in a large bowl. Mix Italian dressing, olive oil, lemon juice, pepper, and garlic salt in a small bowl. Toss with vegetable mixture. Sprinkle with Parmesan cheese and fresh ground pepper.
Makes approx. 8 - 1 cup servings. |
