This looks like a great challenge Bob! I also thank you for the
effort and time you have put into this so far.

I also do the strength in 15 min. increments - I just do not
have the full 30 min. at a time. So if I do 2 of them I will
let that count as 1 point if this is ok with you. If not then
I will aim for the 30.

And on a side note since I see you posting in this thread:

MEEMOO: Did you not get your pm from me and read the
forum message I wrote? You said my team had not
posted their final July results, we did in the week 3 results.
Our leader had dropped out and did not put up a final week 4
result thread. What a mess, but we did complete it and
appreciate you creating the July challenge.

Sorry for not being around much today. Grand-daugter, schedule to be be born tomorrow Noon by C-Section, may be coming early. Things are in an uproar at our house.

I will catch up with things either later tonight or tomorrow. BTW, my son and the mother to be are as calm as can be, and it is their first. Go figure!

Hi All! I am so in! I had such a great time on the challenge last month as member of Team Less Cheeky that I had to join this challenge. (Shout out to my former team members: pp and val!)

Hope things have settled down OGB!

Here's my recipe:

Cosmos Salad
cherry tomatoes
fresh mozarella balls
fresh basil
salt
fresh ground pepper
olive oil

Mix together and serve immediately. Totally yummy!

Hi guys!

Here is my recipe, I am not sure 100% of the measurements cause I usually eyeball it!

White Bean Soup

2 cups white kidney beans/great white northern beans (dry)
4 quarts water/veggie stock/chicken stock (i use water & it is fine!)
1 medium sized onion
4 cloves garlic
2 bay leaves
1 tsp rosemary
1 celery bunch (inside parts that are leafy and pale, if that makes sense)
Olive oil
salt & pepper

In a large pot saute onions and garlic in olive oil until translucent. Then add bay leaf a little salt, and pepper. Saute for a few minutes more. Then add the celery, beans and water. Boil covered for about 45 minutes. Then remove the celery and bay leaf. Continue cooking for about 45 more minutes. Then take out about 2/3 of the beans, and blend in the food processor. Return these beans back into the pot. This soup should be kind of thick like potato soup consistency or very near it. If it is too thin then I will usually boil off some of the remaining water. Then just serve it up - I like to drizzle the top with a little extra olive oil sometimes. If you are on phase two you can enjoy this with a hearty piece of ww bread too! This is a good recipe to make on the weekend, then you can take it to work with you through out the week.

Hi everyone !

Here's my recipe (a family's favorite since we tried it a couple time ago)

Spinach salad (Also known as Salade d'amour in French, don't know if it's know under that name in English !)

2 cups of spinach
1 cup of bean sprout
1/2 cup of brown rice (optional)
3 Tbsp raisins
2 green onions sliced
1/2 red or green pepper chopped
7-8 mushroom sliced
1/4 cup cashew (non-salted)

Dressing
1 Tbsp olive oil
1 Tbsp soja sauce (I use the light one)

Mix all the ingredients, except for the dressing. Mix together the oil and soja sauce, add to the salad. Serve.

I put the quantities as an indication, but the truth is I never really calculate the proportion (except maybe for the rice, raisins and cashew which I limit the quantities).

If you want a full meal, just toss in some chicken, salmon or pork.

Hi Smurlene and Packerprincess! Glad you guys are here for
this challenge.

Also did a full 30 mins. of strength today, when 5 mins. stretching
is added to the end this is more doable as I don't have to find
time for a stretch segment.

Congrats to our challenge leader on all the excitement of a new
baby arriving.

My recipe is something my husband invented during this summer
grill season.

Grilled veggie omelet:

Take leftover grilled green/orange/red peppers and grilled onion
(2 - 3 peppers and 1 onion grilled in a teaspoon of olive oil)

Eggs

Low fat mozerella cheese (small amount)

Heat this combo up to make an omelet. When you use lots of
the grilled veggies you end up eating the ratio of one egg to a
half cup veggies - very
filling.

Got to get back to working out. Happy exercising.

Chicken Enchiladas

Chicken Enchiladas

2 large chicken breasts cooked and shredded
WW tortillas
Shredded Cheese
Enchilada sauce (there might be a SB appropriate canned sauce, but I used a recipe from Allrecipes because I didn't want to go to the store)

Fill tortilla with shredded chicken and a spoonful of sauce, roll up and lay seam side down in baking dish. Pour remaining sauce over enchiladas and top with cheese. Bake for 20 min. or until cheese is bubbly.

Ten Minute Enchilada Sauce

INGREDIENTS

* 1/4 cup vegetable oil (I used canola)
* 2 tablespoons self-rising flour (I used WW flour)
* 1/4 cup New Mexico or California chili powder (I used what I had, I'm sure it wasn't either of these)
* 1 (8 ounce) can tomato sauce
* 1 1/2 cups water
* 1/4 teaspoon ground cumin
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion salt
* salt to taste

DIRECTIONS

1. Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.
2. Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.

Again I must apologize for not be checking on the challenge and I am very glad to see all the activity. I thought yesterday was crazy until how today turned out. To put it short, the little darling soon to be born, while in the hospital shifted to the normal position and the c-section was called off. My DW and I spent 3+ hours in the hospital, waiting. At least I got an hour of free weights in this morning!

Tomorrow I will tell you all who on the challenge and hopefully start giving some encouragement.

I had a wonderful dinner of spag/meatballs with spag squash thanks to Oldgreywolf recipe. Thanks

One of my common favorite lunch meals is:

Luscious Lettuce Wrap:

Head of Romaine Lettuce pulled apart but left as big leaves.
Sliced Tomatoes
Red/Yellow/Orange sliced Peppers
Lean Deli Meat
Low fat chedder cheese/or your favorite kind
Sweet Onions sliced
Hummus

I assemble it all on a platter and make wrap sandwiches out of it with Hummus being the spread. It is also great with just dijon mustard for the spread.

When the C was called off my son had a hungry tiger on his hands. The last I saw of them, they were heading to one of her favorite eateries.

Put your entries your established journal or if it is too long, start a new one. Just so it is in the "Your Diet Journal" forum.

I did some checking, WW pasta at it's cheapest is at least a dollar a pound. Spag squash now is $0.49 to $0.59 a pound. A once I got used to the favor, I think it is much better. BTW, the dinner goes even better with a glass of good Italian or Sicilian wine!
