This is the discussion thread for the September Warrior Challenge. Initially, comments, corrections, question, etc. are welcomed. This challenge may not be as polished as some in the past but I think it will be fun. I have tried to make it adaptable to most. I have also added the factor that you do not need to be perfect 100% to succeed. If you blow a day, you can tell yourself “okay I will not do that again’, brush yourself off and still succeed. It is possible that all people in the challenge will earn the title of September Challenge Warrior

Excellent! I'm in. :)

Just to clarify on "beachy day." I'm between a phase two and a three (four pounds away from goal but already at a healthy body weight), and I do a modified version of the SBD. Eating well on my modified version would be a beachy day? Basically, I do eat natural fats and sweeteners in moderation, but my diet is very much in the spirit of SBD. If I'm understanding you correctly, this kind of eating will still fall under a "beachy day?"

Very much so. If you are cruising to phase 3, your diet is tailored to you. If it is in the spirit of SBD, it is 'beachy'. I do an athletic & 'type-2 diabetic' version of Phase 3. The standard diet but a little heavier in complex carbs, (I exercise like a demon), and restricting sugars like phase 2 of SBD. I consider this 'beachy'!

I'm in too! Still not looking to lose weight (yet) as I'm 23 weeks pregnant. But I'm looking to start an exercise regime again. August was hard, I was out of town a lot and therefore did not exercise (other than leisurely walking around Manhattan on vacay). I've already exercised every day this week and looking forward to keeping it up!

This is great! Thank you for taking the time to organize it. I guess I need to decide on a personal goal by Monday. I will be on vacation but this will be the perfect motivation to get me exercising and stay "beachy" while on the beach.

September Warrior Challenge Stage 1 Special Points

The “September Warrior Challenge Stage 1 Special Points” requirement will be to post on the discussion thread a SBD friendly recipe that you especially like. I doesn’t need to be a new recipe, just one you like. Sharing a good recipe may help others to develop their own set of recipes.

OldGreyBob’s Spaghetti and Meatballs

Ingredients

1 medium to large spaghetti squash
1 package of Italian seasoned lean ground turkey, 20oz.
1 tsp of dried basil or a handful of fresh basil (I love fresh basil)
¼ cup of onion
¼ cup of Whole Wheat Bread Crumb
1 large egg
Salt and pepper
Jar of pasta sauce, (no sugar added type, but it will still say 5 to 6 grams of sugar – it is from the tomatoes.)
Parmesan cheese if allowed or desired
Pam no-stick spray

Directions
Pre heat the oven to 350 degrees. In a food processor, put in the basil, onion, dash of salt, a dash of pepper and bread crumbs. Pulse until finely chopped. Add egg and pulse again. Now slowly add the ground turkey and pulse until completely mixed. Spray a baking with Pam. Using an ice cream scoop, form half scoopfuls of the meatball mixture into meatballs and place in the baking dish. Bake for at least 30 minutes, (a little over baking does not hurt.) PS, the meatballs do not brown much.

While the meatballs are baking, wash off the exterior of the squash. Cut a slit, about half way through, lengthwise in the squash. Put in a microwave and cook for 15 minutes at high. Then take the squash out and put on a cutting board. Let it set 5 to 10 minutes. While the squash is cooling off, heat up the desired amount of pasta sauce. After the squash has cooled slightly, starting at the slit, cut the squash all the way through. Remove the seeds being careful not to throw away too many strings. Using a fork and a hot pad, loosen the strings and put into a bowl.

By now the meatballs should be done and the sauce heated. Remove the meatballs from the oven. Depending on how you do things, either put in bowls the sauce, ‘spaghetti’, and meatballs on the table and let each assemble their own, or make up bowlfuls, (flat Italian pasta bowls ideal), of assembled servings. Pass the parmesan if desired.

The recipe reheats well for planned over lunches at work the next day. Serve as a side dish in place of need of mash potatoes, extra ‘spaghetti’ is also very good reheated with a touch of oleo and salt.

Crustless Spinach Pie

2 pkgs. frozen chopped spinach
16 oz. container cottage cheese
1 diced onion
1 C shredded cheese (any kind, I've used mozzarella and cheddar)
2 eggs, beaten
garlic powder
pepper

Thaw and drain spinach well. Combine all ingredients. Bake in a greased 8x8 casserole dish at 350 for 30 minutes until browned. Let sit for 10 minutes before serving.

Chicken with Sun-Dried Tomatoes and Capers

Ingredients
4 boneless, skinless chicken breasts
1 1/2 Tablespoons olive oil
salt to taste
freshly ground black pepper
ww flour for dredging
1/2 cup low-sodium chicken broth
2 Tablespoons lemon juice
1/2 cup sun-dried tomatoes, rehydrated and chopped
2 Tablespoons capers
2 Tablespoons chopped parsley

Cooking Instructions
1. Lay the chicken between two pieces of waxed paper and flatten each breast with the flat end of a mallet until thin.

2. Heat the olive oil in a large, non-stick skillet until hot. While the oil is heating, season the chicken with salt & pepper and dredge in flour.

3. Saute the chicken over high heat, about 3 minutes on each side. Remove to a warm platter and keep warm.

4. Quickly add the chicken broth to the pan and stir with a wooden spoon to release any caramelized bits that may be stuck to the pan. Add the tomatoes and cook until the broth has reduced by half. Add the lemon juice and capers. Pour the sauce over the chicken, sprinkle with parsley and serve

o.k so i posted the recipe on the wrong page . guess i misunderstood. well i will post it here too. maybe bob can go into the other forum and delete the recipe from there , so i will not feel so foolish! well here it is again!

challenge 1:
recipe: green chilli soft tacos

ingrediants: wheat tortillias, can of hot green chilli, ground turkey, diced onions, diced tomatoes, lettuce, garlic powder,

brown turkey meat in skillet,
pour in green chilli, and diced tomatoes and onion.
cook for about 15 inutes or onions are carmalized, then drain any extra grease. warm up tortillas and make burritos with the meat ,lettuce and tomatoe and enjoy! oh you mightt want to add some salt and pepper.
