indigestion when eat carbs

hi,
I reached my desired weight on the SBD about 3 years ago and have continued eating low carb since. Now when I eat bread, salty foods or certain fruits I suffer severe bloating and heartburn. I was wondering have I lost my enzymes to digest these carbs - have I induced a carb intolerance? I have always suffered bloating after eating fruit but now it is a lot worse. I'm trying to work out if it's IBS or my body just doesnt know how to deal with certain foods I haven't been eating for a while. All advice so welcome! Thanks.

Its possible that you could have developed an intolerance to gluten (a protein found in wheat, rye, and barley). I have an allergy to gluten and developed it just this fall. I'm not sure about the fruit thing though, but try researching gluten-free foods and eliminating them from your diet for a week and see how you feel

You can't "induce" a carb intolerance. With the removal of gluten from your diet, your body probably recovered somewhat from an already existing allergy. When you reintroduced them back in your diet, your body perceived them as an invader. I don't know about the fruit, though. If they were introduced in combination with the gluten, I would say it was the latter you have a problem with. My daughter is celiac, and needs to strictly stay away from all gluten. Also, remember gluten is hidden in a lot of items, like toothpaste and mouthwash. HTH
