French toast (from this boards)
2 beaten eggs
1/2 cup fat free milk
1/4 tsp. vanilla
1/8 tsp. cinnamon
SB friendly bread
Beat eggs, milk, vanilla and cinnamon. Dip bread, cook!!! |

Saw this on the Recipe forum... looks really interesting. Haven't made it yet but will try it maybe tomorrow.

Brownie Cookies
Makes 24 cookies
½ cup margarine or butter
¼ cup agave
1 egg or egg substitute
½ cup cocoa
½ tsp baking soda
dash of salt
½ cup fiber one slightly crushed
¾ cup whole oats (At home I use Bob's 5 grain cereal)
½ cup chocolate chips
¼ cup flax seed meal
1. heat oven to 350°
2. Blend butter, agave and egg.
3. add dry ingredients and stir well
4. drop by heaping tablespoon full and flatten slightly
5. bake 16 minutes or until firm on the outside

Calories 99.68
Fat 6.89 grams
Sat Fat 3.86 grams (when using butter and whole egg)
Cholesterol 20.9mg (when using butter and whole egg)
Sodium 71.86

So, there's one more week of the challenge.. how is everyone doing?
I wanted to take a poll, if you will. In this challenge, there were no points for eating "on plan" like there have been in previous challenges. I wanted to do an experiment. I wanted to see if eating good most of the time would come naturally and prove to be a way of life... or, if since you didn't get points for eating well, if most of the time it just wouldn't happen.
How do you think this effected you, if it did at all? Any thoughts? |

Tuna noodle casserole--this was very yummy.
heat oven to 350
4 cans water packed chunk light tuna, drained.
8 oz cremini mushrooms, sliced
1 small onion, chopped
1 large carrot, small dice
1/4 cup peas, frozen
3T olive oil
1T ww flour
1 cup fat free 1/2 & 1/2
1 cup lf cheese (I used lf colby and a lf american/swiss I got at sams)
2 cups cooked ww or 1/2 carb pasta ( I used 1/2 carb, a high fiber pasta)

In a preferably non-stick skillet, saute the onions, carrot and mushrooms for 10-12 mins over med heat. You want the mixture on the dry side. Add the ww flour, stir and cook 1 min., reduce heat to low. Add the 1/2&1/2 and stir. Add the cheese to melt.
In a 2 q casserole srayed with pam, place the pasta, the tuna, and the peas. stir. Pour the melted cheese mix over the tuna mixture, and stir to blend.
Place in 350 oven for 20-30 mins, until bubbly. If you want your casserole more creamy, cover while baking. |

I think I've been eating pretty well even though there weren't points specifically for it. I guess after a couple of years I've pretty much gotten the hang of what is good for me and what isn't. My challenge is that I'm doing more weight training and that makes me hungrier and I eat more grains so I haven't really lost as much as when I was running pretty much exclusively and skipping grains at dinner more often. :? But strength training is important I know I know. :twisted: |

Hi
I think not having points for eating SB has made me
splurge more often, but also is easier to eat out without punishing yourself
I think it depends inw hich phase you are, I am in phase 3 and don't need to loose weight, so allowing myself to be good most of the times and don't worry about following the rules strctly is good, but I am not sure if it works if you are trying to loose
Here is my recipe for last week, it is really yummy and DH approved
Zuchini primavera
heat 1 tbsp olive oil in medium skillet
add 1 cup chopped green onions and 2 slices chopped TJ lean turkey bacon (20 cal slice, adds taste but not calories)
lower heat, add 2 sliced zuchini, cook 3 minutes
add 1/2 cup chopped roma tomatoes, spices
cook additional minute
cool a little bit and serve as side dish |

I stayed on plan more than not. It's actually something that's fairly easy for me to do now. I know what I should and should not eat. Not having points for eating made me not feel guilty or that I was letting my team down if I made a bad choice in food. I have enjoyed all the exercise sessions too. It's pushed me to do more than I normally would. |

I will admit that not counting points for staying beachy made it easier to cave into temptation. But I believe I stayed beacy at least 90 percent of the time anyway. I know I was sick the first week and that threw a wrench in the wheel as far as eating but I pretty much stayed on the high road. I do the SB is a way of life for me now but I do believe that if there is something I want I should have it within moderation. It has also made me look closely at the sb way of eating and I was really anal before this challene. I even bought the low carb ketchup. Now I believe that the little bit of regular ketchup I eat really isn't a big thing in the whole big picture. So I see myself from this point forward not being so damn anal about the whole thing and I feel really good about that!! :)
Plus I didn't know if I could keep up with the exercise and man I find myself WANTING to exercise now!! It isn't a chore like it was when I started. I look forward to it and know how good it makes me feel. I see myself continuing on after the challenge pushing myself to the limit. I find I want to exercise everyday even if it is a small walk.
I remeber really hemming and hawing about signing up for this challenge! Man I am so glad I did and that I stuck with it. I proved a whole lot to myself and I see some changes too. Damn, I pulled jeans out of my closet that I could not even get past my thights in January and now they feel baggy a bit and they are the smallest size I own. So I will need to add to my closet to get me through the stages.
I am really excited to see how much I will change before we get married in September! :) |

Wow, need it gone. That's amazing. What an awesome testimony! That really encouraged me. :) Thanks for sharing.
I feel the same way about things we want, we should be able to have in moderation. I understand some things are important.... like whole wheat bread (over white bread), but others aren't as important.... like 1 tsp of ketcup. ;) I tend to be pretty anal myself, so I totally know what you mean! :lol:

| Your right Pook!! My eating habits have changed sooo sooo soooo much for the better. It is whole grain bread and pasta in this house now although I find myself not wanting it anymore. I would rather fill my plate with veggies, plus I have found that even whole grain bread leaves my belly with an empty feeling, not hungry just feels empty. So I have half of a ww pita instead and that makes my belly feel full. I really think that is the big picture, not a little BBQ sauce with a corn syrup listed in the ingrediants. If I put 98& healthy in my body all of the time, the other 2% isn't really going to matter so I find myself relaxing a whole lot more in the whole process. :) |

| I did pretty good for first couple weeks, but then last two weeks were bad for me. It doesn't have anything to do with tracking points, one week I was sick and the other week I had guests for a whole week. It was too hard to cook just for me and then for 3 of them, plus I had to take them places to see. So I think I did good not counting last two weeks. And I back on track this week. |

I have had my bad days but all in all I am pretty hard on myself when I eat off plan, whether we are counting points for eating SBD or not. I do like counting points but I know the other challenges I have done where you count points for eating the right way I feel way more down on myself when I slip up. Everyone is going to have an off day right? I know this challenge has kicked my butt everyday! :D |

I got this recipe out of Simple & Delicious, it's a magazine my boyfriend's mom suscribe me to as a little Xmas gift! I made this as a side salad for dinner last week and just haven't gotten a chance to write it down here yet. .blah!
Tomato Feta Salad
5 medium tomatoes, thinly sliced
1 medium red onion, thinly sliced
1 package (6 ounces) crumbled tomato and basil feta cheese
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon dried oregano
On a serving platter, layer tomatoes and onion. Top with feta cheese and olives. In a jar with a tight-fitting lid, combine the oil, vinegar and oergano; shake well. Drizzle over salad. Serve with slotted spoon.
Yields: 8-10 servings. |
