I am astounded that with all the Atkins and SBD awareness of the effects of sugars in the system that no one seems concerned with the very bad effects of artificial sweeteners, particularly aspartame. I have deliberately never ingested it and don't want to be forced into a corner to stay on this program. Does anyone know of desserts made with stevia?
Particularly, jello type desserts. I cannot locate one that lets you add your own sweetener.
Stevia is a plant product and has not been molecularly damaged or made of chemicals. It comes in liquid drops or packets, try it! I've used it for years. It has no calories and no glycemic response. |

I would think you could make your own using unflavored gelatin. I have a recipe in a book that called for using diet soda (16 ozs), any flavor, as the liquid and sweetener. (I think there are a few made with splenda now.) I'm certain there must be other "real" recipes out there where you make your own with flavoring and sweetener. Give the recipe lists a look and post if you find any. :D
Btw, have you cooked with stevia before? I made a cheesecake that everyone on the boards raves about using stevia instead of splenda, and it was just awful. I was wondering if it "cooks" badly. |

| I personaly use splenda it is different than aspertame. It is more natural and doesn't have the side affects. I like Diet Rite soda made with splenda. I also like to keep Blue Bunny Health Smart Ice cream bars in the house. I am not a big candy person so I dont realy use the sugar free candy. |

| What are the side effects of aspartame. I've never heard of it and I love to drink the flavored waters they sell nowadays but I noticed it has aspartame. Is it really bad? |

Aspartame is more commonly known as Nutrasweet; it's what's in Equal, Diet Coke, and tens of thousands of other products.
There is quite a bit of research that would indicate that Nutrasweet is harmless in the amount commonly consumed by humans. There are also a number of people who disagree and believe that Nutrasweet is the cause of a variety of ailments, everything from headaches to brain tumors to autism.
Check out http://www.aspartame.org/ for the pro-aspartame side of the story. Check out literally hundreds of anti-aspartame websites such as this one http://www.dorway.com/badnews.html |

| The only Splenda flavored products I've ever seen are the Diet Rite Soda and Hansen's Soda (from Trader Joe's for those in CA). And also the DaVinci syrups. I tried to find SF jello with Splenda but was unsuccessful. |

The only thing not made of chemicals is a vacuum. Plant products can be loaded with chemicals, many of them dangerous and even banned (like ephedra). Cyanide is a natural substance. So is arsenic.
Aspartame is made of 2 amino acids, and is broken down by the acid in your stomach to the constituent amino acids (phenylalanine and aspartic acid) that are also found in most all types of food on our planet. The only way it's not broken down is if you eat pounds of it and the oinly people sensitive to it are people with phenylketonurea, a genetic disorder that causes a person to be unable to handle any food containing phenylalanine.
Personaly I'd rather have a dose of one of these artificial sweeteners than some "natural" herbal concoction that is untested and unregulated in any way.
Yes, I'm a chemist. I have nothing to do with the food industry, though. I work in cardiovascular medical research. |

| I'm so glad this topic came up. SBD is all about healthy eating, but not many people seem bothered by the artificial sweeteners. I've gone off the diet and am considering going back on, but I won't consume Nutrasweet or even Splenda for the rest of my life, and I know avoiding sweets forever is unrealistic. I haven't used Stevia yet, but I think if we're going to eat naturally, let's do it across the board. |

I don't have any research to quote but it certainly seems like the more natural and unprocessed your food is, the better. I read the labels on all those low net carbs snacks and such and wonder just what the heck IS all that crap? It is my impression that a small amount of naturally sweetened (ie honey, maple syrup, molasses, etc) food would be better for you than all that fake junk. I have yet to find any product on the market that is sweetened with Stevia, but I use it myself in a few things like oatmeal, yogurt, ricotta cheese. I wanted a "Diet" soda the other day, and created an Italian soda (reasonable facsimile) using stevia, Talking Rain raspberry-flavored seltzer water, and about a quarter of a cup of half and half. Now granted, it's not exactly health food, but it was a nice treat.
Have you tried any of the Stevia manufacturers websites to see if they have any recipes? |

| Hello. I am new here and think that this is a wonderful site. I plan to start SB very soon. On the aspartame subject, it caused severe cluster migrane headaches in me for years. As soon as I stopped with the aspartame, I have not had a single headache. Now I make it my life's mission to tell everyone about the true dangers of aspartame. Misty |

Misty So YOU have headaches from aspertame. I never have had one. I get headaches when I quit drinking coffee. I will make it my life mission to tell people about the true dangers of quitting coffee.... |

| Ugh, I can not stand the taste of aspertame or splenda and I feel like it can't be good for me. I plan on not using it once I get past phase-I don't eat a whole lot of sugar anyway and will probably just use honey and sugar in the raw sparingly. |

| this is what i want to know: if aspartame is so dangerous, why is it used in so many products? and why haven't there been huge warnings about it, say on the products that contain it or anywhere else that isn't the internet? has anyone seen something on the news or a newsmagazine like dateline? |
