I don't think you're eating too much, but your menu could use a bit of reworking. I can't tell how these are broken up into meals and snacks, so I'll attempt to help, plus offer a bit of general advice:

Make sure you eat breakfast. If you're short on time, make a batch of quiche cups ahead of time to reheat in the morning. Tomato juice or V8 gives your body the carbs it needs to keep you out of ketosis, but it needs to be ingested in addition to a protein, not alone. Just a beverage is not an appropriate breakfast.

If you don't like eggs, suggestions from this board include various cottage cheese concoctions or even a salad. A quick look through the pages will show many threads titled "breakfast ideas?" and the like.

If you must have a cappuccino (Dr A warns against drinking caffeine), using 1% or skim milk instead of cream would greatly improve its healthiness.

Have a mid-morning snack. Are those your pistachios? You can have up to 30.

Turkey burgers are probably okay (bunless? how is the fat content?), but maybe not two of them. Fill up on a salad or more veggies after the first one.

Have an afternoon snack. Turkey roll-ups, celery w/ Light Laughing Cow, cottage cheese, a hard-boiled egg, etc.

Hot dogs aren't such a good choice, unless they're a turkey version, but even then they have high sodium and a lot of junk. Chicken breast is better. Go ahead and have that for dinner instead of eating it as a guilt-inducing late-night snack. Have another salad or side veggies, like your asparagus w/ mushrooms-- good choice.

You get dessert (SB friendly, of course)! Plan your dessert ahead of time so you can make a good choice instead of grazing on other stuff. Chocolate soy milk probably has a lot of sugar, unless it's a sugar-free version.

If 9:30- 11 pm is a problem snacking time for you, save your dessert for then instead of eating it right after dinner. No-sugar-added fudgsicles can help with your chocolate fix in a less damaging way; or ricotta desserts are good plus they give you calcium.

I hope that helps!

greetings.
i was a vegan for 3 years, so i consider myself well-informed on all things soy.
DO NOT DRINK CHOCOLATE SOYMILK.
my boyfriend and I used to joke and call it soy-fat.
the chocolate part has lots of sugar in it. maybe you can try plain soymilk, will non-sweetened cocoa-power and some splenda?
