I just started the diet plan this week and I'm having one problem with it.... I really dislike eggs... does anyone have suggestions on other foods I can eat for breakfast that don't involve eggs? :roll:

Try this -- it's SOOO good, you'll think you're eating regular pancakes!
And I'm 99% sure it's OK for Phase 1 -- I'm not sure what the nutritional breakdown of the psyllium husks is, but I put the flaxseed info at the bottom. Enjoy! ps - the flaxseed & psyllium husks might sound like totally funky ingredients, but you should be able to find them at a high end grocery or health food store.
Flaxseed Meal Pancake
2 eggs
3 Tbsp. ground flaxseed
1 Tblsp. psyllium husks
1/8 tsp. salt
2 packets splenda
1 tsp. baking powder
dash vanilla
Stir until combined, let sit a couple minutes to thicken, add a couple tsps of water if you think its too thick. Pour into oiled or pammed skillet and brown on both sides. Makes 2 big pancakes. Serve with sugar free maple syrup or fresh fruit in P2.
For those of you who may not know, ground flax seed and psyllium husks are recommended for help with constipation problems (you can buy psyllium husks at Target, either plain - tastes like cardboard - or its the main ingredient in metamucil! All I had on hand was sf orange flavored metamucil, so I used that!) I also added some cinnamon. I know this doesn't sound very appetizing but it really was wonderful.
For anyone tired of eggs and/or having regularity problems, this is good.

| I've been eating mostly quiche cups for breakfast. if you dont like them disregard this but they were made for me 12 at a time and I didn't even know eggs were in them! I thought it was just spinach and cheese. |
