I'm new to the South Beach diet and am still trying to figure things out. So far everything I've read seems like all your breakfast meals consist of eggs.
:?: I am extremely allergic to eggs. Please, what can I substitute for eggs?
I am a very busy person with not much time for preparing meals. I really need some advice. |

The best help I can offer you is to ask your doctor. I have many food allergies, but I have never had to substitute them for anything. Sorry that I couldn't help you any more than that.
By the way, this is what I posted...can you answer any of my questions?
just bought the book and I have two questions. First, can you substitute meals throughout the first 2 weeks? For instance, if I don't want the vegetable quiche cup, can I have a western egg white omelet instead? Second, when it says to eat when you are hungry, does that mean that you can snack more than the scheduled 3 times a day? Do they want you eating healthy snacks throughout the day? |

There are things to eat for breakfast besides eggs. Try lowfat cottage cheese, or low fat ricotta; have tuna on lettuce if you want--anything that is allowed thruout the day is ok for breakfast, too.
To the reply that asked about substitutions: The meal plan is a suggestion, not the diet. Personally, I can't eat before 11 AM, and we eat dinnner late, so my "meals" are centered around the afternoon--lunch and often two well spaced "snacks" before dinner--from 4-6 is when I am the hungriest. If you don't like the quiche cups, don't eat them. Just use something else that is allowed. I lived on tuna for the first three weeks, sometimes ate it twice a day. Fat free jello saved me more than a few times, too, when I needed something sweet. |

Here's some non egg breakfast ideas:
BVT (BACON, VEGGIE AND CHEESE)
Take 2 slices of Canadian bacon. Top each one with a thick slice of tomato, some steamed spinach and some sliced sauteed mushrooms. Top with a slice of low fat cheese and put under the broiler til melted.
JELLO CHIFFON
Dissolve 2 pkgs sugar free jello in one cup boiling water. Add 2 cups very cold water and put in refrigerator until jello is almost set. Whirl the jello and a 16 ounce container of fat free or reduced fat cottage cheese until frothy. Pour into 1 cup GladWare containers and chill until set.
MOCK CINABON
1/2 cup cottage cheese with one packet of Splenda and a tsp of cinnamon (or to taste). Top with a few chopped pecans. You can heat this in the microwave for 10 secs. to take the chill off.
Celery with Peanut Butter
Ham or Turkey Rollups
Veggies with Hummus

| Thanks for all the great info. Knowing I can substitute the eggs is very encouraging. Does it matter how much you eat. I know they say eat till your satisfied. But for me that could be a couple of bites. For my husband that could be several servings. |
