| I enjoy hot soups and stews during the cold winter months. Anyone know any good recipes for Phase 1? Thanks :) |

| There is a thread about Soups in the recipe section of this board, and one of the soups was something called Green Chicken Soup . . . I didn't like it the first time I had it, but then I went back to it the next day and sprinkled a little parmasean in it and it became love at second sight LOL. |

OMG...I can't cook at all (or so I thought!) and i made a variation of a soup on that thread listed above last night. Here is my version:
1 can low sodium/ff chicken broth (college Inn)
1 can of crushed tomatoes (muir glen)
2 slices of turkey bacon cooked and diced up
1 small diced and sauteed in canola oil onion
2 cups fresh brocolli (steamed)
1 can black beans
I obviously cooked the bacon first and diced it and threw it in a big pot.
I cut up and sauteed an onion in canola oil and threw it in the pot
I cut up 2 cups of fresh brocolli (or you can use a frozen bag of brocolli) and steamed it in the microwave for 2 mins and threw it in the pot.
add the tomatoes, broth, and black beans. Simmer on low heat for 1/2 hour. Smells and tastes AWESOME! |

I can't remember if I found this soup recipe on this board or another one but it is the best soup I have ever had! :)
Santa Fe Soup - I'm doing this off top of my head
2 lb lean hamburger
1 onion chopped
1 can diced tomatoes
1 can rotel tomatoes
1 can pinto beans
1 can black beans
1 can kidney beans
1 pack taco seasoning
1 pack ranch dry dressing mix
2 cups beef broth (0r can use 2 cups water)
Cook hamburger and onion, drain off any grease.
In pot add all ingredients ( I usually drain and rinse all beans and then add some water). Simmer on stove top for 2 hours.
I have tried different variations of this soup also, I add different veggies. Anything pretty much works! |
