| Can you eat popcorn, and if not why. It is a very high in fiber, and without butter I would think it would be fine. You can eat it on any other diet just without butter. |

In Phase two you can have popcorn, accoreding to the "Good fats, Good carbs" guide a serving of air popped popcorn 2 cups is limited, also you can have 2 cups of air popped popcorn w/ 1tsp of oil, and its limited.
So YES you can have popcorn (in Phase 2), but more of a treat, not an everyday kinda thing. |

| And you definitely have to air pop it yourself, as Darlene said. I was looking at the microwave popcorn at the grocery store yesterday, and every single box I picked up had partially hydrogenated oil. This included the ones that were 'light' and 'natural'. |

| Or buy the popcorn kernals, and pop them with a lil canola oil in a pot...thats how we always used to do popcorn growing up as kids....yummy |

I think it may be limited because corn itself is limited. I'm not certain, but I think both have a high glycemic index. But 2 cups of popcorn isn't really that much corn, so it's okay periodically, especially for a cruncy snack!
Has anyone looked into bags of popcorn that are pre-popped? I haven't yet. |

| Someone else posted this recipe somewhere in one of the forums. 1/4 cup unpoped corn in a brown paper lunch bag, fold end to close--I fold twice--and put in your microwave for 1min 55 sec. on Hi. That's for an 1100 watt micro. You may have to adjust for your own. Works great. |
