| Well there are better forums here to post this question in than in the before and after photos area, but to answer your question, no you don't have to follow the menus in the book. You don't have to eat cheese if you don't want to, although I ate a lot of it in P1, so it may still be something of a challenge for you! You should however still eat 3 meals and 3 snacks a day using foods from the relevant Foods to Enjoy list (either P1 or P2). Meals should be a balance of protein, veggies, fats and in P2 additional carbs. Beans (legumes) and milk are really good sources of good carbs in P1 to help keep your energy levels up and keep you out of ketosis. Be sure to check Kimboroni's FAQ pages for updated food lists (a number of things are different than the book now) and a link to a generalized meal planning template that can help you understand how to organize each of the major meals and snacks.
