| Hi, I'm a total carb addict who is new to the whole South Beach Diet thing. I have been doing well with it thus far. I have a question though...I am very used to NO Fat items and I realize some of those items don't translate as well as Lo-Fat in the SB Diet, so my question is can I use Fat Free Ricotta cheese in my recipes rather that the Lo-Fat that the recipes call for? I tried the Belgian Waffles Recipe that is posted on this site and I really loved them! I'm not a fan of eggs either, but the cinnamon was the "trick"! Thanks for any advice... |

| Can you post an ingedients list for the no fat version? Sometimes it is not so much about what gets taken out as what gets substituted when all the fat is removed. This was the problem with many of the foods during the "low-fat" diet craze. They compensated by adding a lot of refined carbs, sugars and other strange nutritional stuff. The SB approach often is willing to allow a balance of foods that are more natural and less processed than trying to overly restrict any one food component category. The good fats also provide a lot of health benefits on their own and also help us to feel fuller and more satisfied when we eat them. I just posted something similar to this elsewhere, but the food lists have skim or 1-2% cottage cheese and part-skim ricotta cheese listed as foods to enjoy. They don't specifically mention FF ricotta, but I tend to think of it as a slightly different form of cottage cheese. Is it sufficiently different that the FF version of ricotta is not allowed and the FF cottage cheese is allowed? I don't have a good answer to that one. |

| I don't think I've ever seen fat-free ricotta... only part-skim. Please do post the ingredients and pertinent nutritional info. |

| Well... I know a Fat Free version exists, because I always use it when making lasagne...However, when I went to compare the Lo-Fat vs. the No-Fat, the store only had the part skim...so I bought it and figured I will check out another grocery store in the next few days for the Fat-Free. I will post the ingredients then. Thanks |
