| I love jicama in my salad or as a dipper for hummus. It is so sweet, crunchy & juicy. I know it's on the Phase 2 list of veggies, but I can't seem to find the GI for it anywhere. I'm thinking it's high because it tastes so sweet -- sweeter than carrots. Any idea? |

Jicama has been added to the List of foods to enjoy in P1, so I don't think the GI is very high at all.

Jicama is a type of tuber grown in Mexico.
It has a brown skin, but looks more like a flattened ball than the typical potato shape.
It can be eaten raw or cooked. I like it raw cut up into salads or as jicama sticks with dip. It tastes sort of like a cross between a apple and a water chestnut. Crisp, juicy and very slightly sweet.
It's usually next to the winter squashes in the grocery store.

I think it is also referred to as "Mexican Yam Bean" or something.
I LOVE these things and am using them as an apple replacement in my Waldorf Salad. I'm still P1, but will be moving up soon. |

Hi...got a question.
I read somewhere about Baking/roasting the jicama with salt, pepper & olive oil (suppose to taste like roasted patoto's.......have any of you tried it?
Does it really taste like patoto's...................?
I am not a big raw veggie eater.............the jicama tasted like a big radish to me raw....and I don't like radishes either............but would like to know more about roasting it?
