I've read kimboron's FAQ andl looked on diabetic web sites and I'm still unclear about butternut squash in phase 2.
1. Is it allowed? I think yes, but not as freely as low GI, low starch vegetables. Is this correct.
2. Is it considered a starch or a vegetable? Here's where I'm totally unclear.
I made some curried butternut squash soup for a company dinner last night and had it then...I'm more flexible about special dinners than everyday food. Now, I'm trying to decide whether to have some later today and how to count it.

I also had butternut squash last night :wink:
Butternut squash is added in P2 and it's counted as a "starchy" carb, with oatmeal, pasta, etc. so the serving per day should be no more than twice a day, and the suggested serving size is 1/2 cup.
Now, I'm trying to decide whether to have some later today and how to count it.
I would have another serving of that delicious soup today. :wink:

| It's a winter squash, which is in the p2 food list of starchy foods, of which you can have up to 3 per day. |
