I have been eating 2 (small) flaxseed muffins each morning for breakfast. Here are the ingredients:
3 eggs
1/4 cup plus 2 tbsp. oil (Canola)
1/4 cup sugar free syrup, such as Da Vinci
2 tbsp. water
1 tbsp. vanilla
1 cup flaxmeal
1/2 tsp baking soda
1/2 tsp baking powder
2 tbsp. cinnamon
1/8 tsp salt
I believe the rest of the day I eat according to the diet.
My dilemma is I haven't lost weight since week 1. Could the muffins be the reason? (I got the recipe from this site.)

I'm not sure if they would be the culprit or not. When I eat these, I only eat one, though.

I love these muffins! I've been making them a lot recently (and my 16 year old son loves them.) Here's a hint:
Use natural (unsweetened) applesauce for the oil. All of it. It still turns out just as good, maybe better. (And cuts 600 calories from the recipe.)
Add 2 Tablespoons cocoa powder (the unsweetened baking kind.)
If you have it, use 2 Tablespoons Whey Low and 2 Tablespoons sf syrup. It cuts the artificial taste to nothing and adds only a few extra calories.
I usually cut mine in half and toast them. Yum! |
