| Sure--just don't eat too many eggs in a day if you have cholestrol issues. |

i wouldn't recommend that you think of eggs as unlimited.
veggies are unlimited
water is unlimited
everything in moderation.
but if you have 2 eggs for breakfast then want another for a snack in the afternoon... that shouldn't be a huge problem as long as your doctor thinks it's ok. |

I think a hard boiled egg makes a good snack. I have one mid-morning most days. It's a little weird to me because I can have 2 eggs for breakfast with a ww english muffin (P2!) and not feel like I've eaten anything at all and still be hungry all morning, but I can have a single HB egg mid-morning and it really satisfies my hunger until lunch.
A study completed in 1999 undertaken by the Harvard School of Public Health and published in the Journal of American Medical Association reached the conclusion that "consumption of up to 1 egg per day is unlikely to have substantial overall impact on the risk of CHD (Coronary Heart Disease) or stroke among healthy men and women. The apparent increased risk of CHD associated with higher egg consumption among diabetic participants warrants further research."

Note that they didn't test for higher levels, so the "safe" upper limit isn't really known.
Also from the HSPH site: HSPH wrote: So, when eaten in moderation, eggs can be part of a healthy diet. People with diabetes, though, should probably limit themselves to no more than two or three eggs a week, as the Nurses' Health Study found that for such individuals, an egg a day might increase the risk for heart disease. Similarly, people who have difficulty controlling their blood cholesterol may also want to be cautious about eating egg yolks and choose foods made with egg whites instead.

So what does moderation mean? Up to you I guess, but I try to stay in the 7-8 a week range. If I was eating more than that, I'd probably find ways to substitute in some egg substitute products like egg beaters because reducing and keeping my cholesterol numbers in good to excellent reference ranges to avoid life long cholesterol reducing medications is very important to me. YMMV. |

| you can also eat the whites only - less of a need to limit those, as they're essentially pure protein. i hate the yolks, so i just toss those and eat the whites with a little salt and pepper. yum. |

I'm with you. Yolks are nasty! It's very liberating to throw them away. |

I'm with you. Yolks are nasty! It's very liberating to throw them away.
agreed! i use 1 whole egg and 2 whites in my scrambled eggs - more protein, less fat. now, when i have scrambled whole eggs, they seem really dense to me. the whole/white combo with a few tbs of cottage cheese scrambled in is so nice and fluffy! |

That's what I use, too. But no cheese for me :( . I use Mrs. Dash Extra Spicy instead to liven them up.
My daughter didn't even know the yolks were edible until she was about 7 years old. All she had ever seen was me throwing them away! :lol: |
